Although I did not post yesterday just want to let all know I did eat. Have both little ones here after Ricky spending some time with good friends. He got a bit wound up yesterday and his grandmother - not me as I am his great great - just adds to the problems. Goodness but she yells and yells. Wish I could get her to zip it for a spell. Since all the kiddies were here and I was tired I took the easy way out - fast food McDonalds which to me is the worlds worse food but kids sure like it. I did not get anything for myself which is normal for that place but did have a Bologna sandwich and an avocado. Suited me just fine.

 

Hope one and all have a good today - yesterday was literally blistering hot here. Way too early for August weather. Just terrible and sleeping was fitful for sure.

@Winifred  I just made the batter fried eggplant, yummy.  There is quite a bit left over, so another meal for me. Smiley Happy  I ate it by itself, but I know you said you make sandwiches, and I think I will buy a baguette in a few days and try it that way. Smiley Happy  I used garlic powder, salt, and cracked pepper, I make a batch of this and use it on many foods, as seasoning in the batter.

 

I used to make eggplant this way, but havn't in a long time.  Slice eggplant on the thin side, but not too thin, or it could be thin, really doesn't matter, but it should not be thick, spread mayo on both sides, and dip both sides in a mix of bread crumbs, I would use panko now, and fresh parm, and bake it until it is crispy.

So glad you enjoyed that eggplant Mousiegirl. I LOVE it!!! Always have. Am sure I must have commented that Mother always called me at work when she was fixing some - and bless her she always fixed enough for me to take home for sandwiches. Actually when my folks - and I - ate eggplant it usually was a stand alone food - nothing else. Oh my, is it time for me to fix some more?

@Winifred  I always send DH to the produce market on his way home from work on Saturdays, and sometimes he brings Acme bread home, never know what kind will be left by the time he gets there,  I didn't request it, and he brought a baguette home, so I had a snack of eggplant on it with a little mayo, and on the cruncy bread it was great, but now I am eggplanted, is this a word, out, lol.

Sounds good Mousiegirl!!!!! Wish you lived closer - we would drive those eggplants crazy and everyone else also. LOL.

 

Did not fix any dinner. Went to church after driving the little one on a 35 minute trip for babysitting so I could go - Grandma - Shannon - did NOT show up again. After that hauled my computer to be checked and the Tech I set it up with was a no show at work. Grrrr - sounds like my luck. Went and got some $$ out of the drive up  - then went to Home Depot to order an outside table and chairs. Mine crashed with a strong wind a couple months ago and since it had a glass top - thar she went. Also with as dry as it is out here the chair legs were rusting off - not safe to sit in them so tossed it all. Finally got around to ordering something else for us to destroy.  Then went and ate. Made another trip for some summer tops and a couple of capri's (do they call them that any more) and also a couple outfits for the little girl. Closets in this house are tiny and so I have ship my seasonal clothes out to the shed in back - what a chore and getting more difficult. I opened up the shed and almost had a heart attack. Someone has but upset. No one will own up to it and it will be hard for me to get it straightened up. am sure it was Shannon - I know her well. Cannot even walk in there - a real nightmare..

 

At any rate, am getting - almost finished - getting my "winter" clothes out and hot weather clothes in - and I am really tired. Am having to de-wrinkle some of the things. Altho I always sort them clean then still wrinkle. Sigh. Have the last bunch getting "ironed" in the dryer. LOL. Then I think I will crash. Start early in the a.m. to try and get the clothes chores finished and do something out in the shed. Davey is NO help again - so what is new.

I did make a couple other trips to pick up some more plastic storage bins - again have nO CLUE where mine all disappeared to. that shed is something else. At this point so is my house. Groan.

 

Hope one and all are great - and yes, I did eat an avocado and banana for dinner. what can I say. I love them both.

flbettyboop, well you spoiled it all, thought sure few hoursa go was Friday. I need to either go back to bed or something to figure it out. Will say, however, a LOT hotter today than Friday and so it goes.

 

Got a lot of the shed straightened out - now that does NOT mean any of you would agree if you saw what it still looks like - but I saw it earlier. Some progress has been made.

 

Got to get a couple sprinkler heads fixed - am so tired of people "helping me by mowing" and not paying any attention to what they do. Need to call John to get them repaired - there goes $100 - am sooooooooo tired of money flying out the door. Sigh

 

Hope one and all had a great day - Davey and I had dinner at Bob's Big Boy - very very good and I did not have to cook but eating out sure has gotten expensive. Coast me $32 and we are NOT talking the full dinner menu. He had a BBQ burger with fries and Pepsi and I had - believe it or not - the battered Cod - only eat it about every 5 years. Had ice tea as a go with and of course slaw. Way too pricey!!!!!

 

Shortly will hit the sack - I am really tired.

Sunday, I grilled Rastelli Market sirloin burgers, bought here, delicious, potato skins filled with a mix of two cheeses, green onions, crumbled bacon on top, then sour cream and chives, and corn and broccoli sauteed with onions

 

Last night, I made leftover grilled chicken breasts tacos for DH, with beans, cheese, tomatoes and cilantro, and I ate sweet Italian sausages wrapped in a grilled flatbread.

Another evening of no cooking yesterday. Went to Denny's - not my favorite place but nearby and it worked for me and Davey. Very late for me to eat - near 8 p.m. and they were busy and getting busier. That was a surprise to me as most people out here - I thought - eat much earlier. Times must have changed and it passed me by. LOL

 

Very very cool this a.m. Actually I am freezing. Suppose to remain this way for a few days - now this is our normal early June weather. All that heat we already had was not our norm. Back to normal I guess. OK with me.

 

I think I will cook for dinner tonight - I should earn my keep in some way I would think. Hmn. Now what to fix? who knows ?!!!

I did cook tonight but nothing great. Pasta, hamburger, cheese sauce and some chili seasoning. Actually it was very good and sure was easy. The little girl surprised me - she ate all of hers - was not sure if the chili would bother her as she can get picky. I do believe she really liked it - Kids, they do surprise you.
