What Are You Cooking For The Holidays????

[ Edited ]

WOW ....another year has flown past!!!  As we are nearing the holidays I thought it would be fun to share recipes you make on the holidays. I know there are some great cooks on this board, so please share some of the recipes you make.

Mashed Potato Casserole

5 pounds potatoes

1 stick Butter Softened and Cubed

1 Cup Sour Creaam

1  Cup Heavy Cream

8 Slices Bacon

1 ½ Cups Panko Bread Crumbs

1  Cup Cheddar Cheese Shredded

Preheat oven to 350°F. Wash, peel and cube potatoes. Rinse with cold water.
In a large sauce pan, cover potatoes with water and add salt to taste.

Bring to boil, and cook for 10-15 minutes or until fork tender. Drain.

Spread potatoes evenly onto 2 rimmed baking sheets. Bake for 5-7 minutes or until the moisture has evaporated.

Mash potatoes (I used a regular old potato masher), butter, and sour cream. Fold in heavy cream. Season with salt and pepper to taste.

Evenly spread mashed potatoes into a 9x13 inch baking dish.

Preheat oven to 350*

Cook bacon until crisp...cut in small bits.

In a large mixing bowl combine bacon pieces, panko, crumbs and  cheese,
Season with salt and pepper to taste.

Spread over the top of the mashed potato mixture.

Bake for 40-45 minutes or until heated through.

My nearest relative is 3,000 miles away....and I don't plan on flying.    I "might" order a pizza....

@LilBitMissty  Your potatoes sound fabulous.

Easy Corn Pudding

2 eggs

1 cup (8 oz) sour cream

2/3 cup butter melted

1 box jiffy corn mix 8.5 oz or a similar brand

1 can 14.5 oz cream corn

1 15.25 oz can whole kernel corn

Preheat oven to 350 and spray a 9x13 pan with nonstick spray or use butter. Mix all ingredients in a mixing bowl. Pour into prepared pan and bake 350 for 30 to 35 minutes

Would not be a holiday without this on the table. 😋

@godi   This is very good, I have made it several times. However, I was just reading different versions of this and a few called for using the liquid from the whole kernel corn, have you heard of this?

Re: What Are You Cooking For The Holidays????

Haven't decided on sides yet, but definitely making Hubby's favorite turkey:

Heat oven to 350 degrees

Rub butter or oil over the skin of the turkey until it is completely
coated.  Take a knife and gently separate the skin from the breast meat.
Slide lemon halves under the skin with the peel side up. This way the
Juice from the lemon will coat the breast. Season skin of turkey to
your preference, place sprig of rosemary into the chicken.

Cover and place in oven for 3-4.hours. Remove cover and continue
to roast until juices run clear, basting every 15-20 minutes dependi
on the size of the bird.

If you've followed these steps correctly, your turkey should look like
the one in the picture.

Sorry, I couldn't resist, LOL!

It's just the two of us as usual so I'm still making a turkey and all the rest because we like the leftovers. We thought about going out but changed our mind. Stay home, open the back door, light the fire pit and eat outside.

@Miss Pepsi  The point is being thankful.  At the least, maybe just be thankful that we have means to connect with others on boards like this instead of being isolated.

I myself may be alone this year and I'm thinking Turkey Picatta.

@Miss Pepsi   I am so sorry about the recent loss of your husband.  Naturally, your profound grief has you feeling this way.  There are many stages to grief and it ebbs and flows.  Some moments will be better than others.  Just know that you will slog through this.  You are in the minds and prayers of so many here, including me.

With warmest thoughts and a virtual hug,
