Re: What Are You Cooking For The Holidays????

Neither dh or I care for turkey so we have started the tradition of Mexican for Thanksgiving

Homemade tamales, chili rellenos, guacamole, Pico, and homemade refried beans. Might make the tortillas this year as well.

@Miss Pepsi  The point is being thankful.  At the least, maybe just be thankful that we have means to connect with others on boards like this instead of being isolated.

I myself may be alone this year and I'm thinking Turkey Picatta.

Sorry just having my own pity party here

@Miss Pepsi

You have every right to have a pity party as you grieve your profound loss.

Just remember you have lots of strong shoulders here to lean on, if you need to talk.

Deepwaterdotter, (sorry if I butchered your name) I printed the slowcooker turkey recipe, thought I could cut it in half and make it for just me.

I hope you find it tasty.  And hope each day finds you more hopeful for the future.

@panda1234  I always drained the whole corn. I think if you didn't it might be moister I don't think it would ruin the recipe.

Re: What Are You Cooking For The Holidays????

Thanksgiving is probably my favorite holiday....good times with family enjoying delicious food.  This year could be a different gathering....not sure at this time.  However, I usually fix items similar to some posted here.....mashed potatoes, turkey, stuffing, vegetable and cranberry sauce....recipe posted under October Recipe Swap Game here.  I am getting hungry already!!!

@Miss Pepsi  So sorry you are alone now. Do you think you would be up to inviting a neighbor or maybe volunteering at a local homeless shelter? It's ok if your are not ready. Just a thought.

Re: What Are You Cooking For The Holidays????

@LilBitMissty My grandchildren tell me this is the only way they will eat Brussels sprouts:

BRUSSELS SPROUTS WITH BACON AND SHALLOTS
This is a Thanksgiving favorite.

Ingredients:
1 lb. Fresh Brussels Sprouts
1 Shallot
3 Strips of Bacon
1 Cup chicken broth
Butter
Kosher salt and pepper

Directions:
Wash the Brussels sprouts and trim off the outer leaves. Slice in half and float in water until ready to use. Slice or dice bacon into small strips or bits. Peel and slice a shallot in half and then in very thin half-moons.

Add bacon strips to a large, cold pan and place over medium heat. Allow the bacon to crisp slightly wile stirring once in a while. Now add the shallots and continue to cook for 2 minutes. Now raise the heat to medium high, add olive oil if necessary and add the Brussels sprouts - open face side down. Shake pan and salt and pepper the ingredients. Cook for a few minutes until brown marks start to appear on the underside of the Brussels sprouts. Now flip the sprouts a few times, add the chicken broth and cover the pan. Cook, covered, for 5 min. Now take off the cover, add butter, flip the sprout and continue to cook until done, about another 5 min. Don't let them burn! Turn down the heat if necessary. The sprouts are done when they are slightly fork tender and the cooking liquid is nearly dried up.

Re: What Are You Cooking For The Holidays????

I'm very sorry for the loss of your husband, @Miss Pepsi. I think you should do whatever you feel like doing this Thanksgiving. And if its nothing, there is not one thing wrong with that.

You are in my thoughts and prayers.

Re: What Are You Cooking For The Holidays????

MissPepsi

I know that words are inadequate at a time like this but I wanted you to know how very sorry I am for your loss. The loss of a spouse is a tragic event and I know the pain and suffering you are experiencing as I have lost my husband, only chid and my parents.

It is times like this that our faith is put to the test. We know that we must accept his passing and give thanks for the wonderful life he lived. As sad as it will be, we will always have the memory of him to hold in our hearts.

The Bible reminds us that "Blessed are those that mourn for they shall be comforted." I pray that this will be especially true for you as you mourn your loss.

I pray that God will give you the strength to see you through this sad and difficult time. My thoughts and prayers will be with you all. We are glad you are on this board as you have friends here that you can always talk to.

May God Bless and confort you. Hugs
