As I scratch my head and wonder why you can't make regular cakes and cut them into disks like you do for a filled cake? 2 cakes cut into 3rds and one more with 2/3 cake left over to freeze for later.

@Barbarainnc, I think I'd be more inclined to slice a regular round cake...because I just know I'd overcook those small amounts of batter!
I have trouble enough w/ 2 pans!
But TYVM for sharing the recipe.

It makes sense. I just saw a recipe in a Taste of Home cookbook where you made the layers in a round fry pan, much like large pancakes. It was for a red velvet torte and I said No Way.

UPDATE Use 1/2 cup and 1/4 cup of batter, leveled off for each pan. Otherwords use 3/4 cup. I have the old apple green Tupperware measuring cups, that have the 2/3 c and 3/4 c.
