Ice Cream is always a summer favorite!  Here is a recipe I forgot about.....easy, light and has ICE CREAM!

 

Angel Food Cake

 

Buy pre-made Angel Food Cake (or make your own...I take short-cuts).

 

Cut a thin layer off top and set aside.

 

Scoop out inside cake leaving about 1" edge. (You can use these pieces to put back on top of ice cream if you want).

 

Soften one quart of favorite ice cream and put inside cake.

Place thin piece of cake that you cut off back on top.

 

Thaw one container (8 oz) Cool Whip and ice the cake.

 

Put in freezer.

Set out a few minutes before serving to slice.

 

Enjoy!

PINEAPPLE WHIP (non-dairy frozen summer dessert; makes about 3-4 servings.

 

1 whole pineapple – cut up and frozen overnight

1-2 cup(s) coconut milk (or coconut cream or milk of your choice)
Optional-- add a sprinkle of lime crystals or 1/2 - 1 tsp lime juice

 

Directions:
Place frozen chunks of pineapple and coconut milk into a food processor or high powered blender and blend until the consistency becomes creamy.

 

You may have to stop several times and scoop down the pineapple.

 

If desired, put mixture in a plastic bag with the end cut off and put in ice cream cones/cups.

All those desserts sound good ,quick and easy. I like to make ice cream Sundays in the summer.

My DH loves this light dessert.  I don't even measure the ingredients because it's a forgiving recipe.

 

Cube a loaf size angel food cake.  Cream a half cup powdered sugar with an 8 ounce block of cream cheese.  Fold in about 3 cups of Cool Whip and the cubed cake.  Press in pan.  Make a small package of strawberry jello with one cup boiling water.  Add a pack of sliced strawberries that have been slightly thawed. Pour on top of cake and refrigerate.

Frozen Strawberry Salad/Dessert

 

2 pints strawberries (I put them in blender for smoother consistency.)

1 large can crushed pineapple, drained

1 can sweetened condensed milk 

2 cups mini marshmallows 

1 cup chopped pecans

 

Mix all and put in 9x11 dish and freeze.

 

Thaw a few minutes before serving.

This no bake Strawberry Delight Cake I found on a food blog has become a family favorite.  It reminds me of strawberry shortcake without all the work!

Strawberry Delight Cake
8 to 10 Servings
  
1 sugar-free white or strawberry angel food cake, cut into cubes
1 (1 oz.) pkg. sugar-free instant vanilla pudding mix
2 cups milk
1 (16 oz.) pkg. no sugar added frozen strawberries (or fresh strawberries)
1 (12.75 to 15 oz.) container sugar-free strawberry glaze
whipped cream (optional)
 
Spread half the cake cubes in the bottom of a 2-quart glass bowl.  Mix pudding and milk according to package directions; pour over bottom layer of cake cubes to completely cover.  Spread remaining cake cubes over pudding layer.  Halve or slice strawberries (easier to do if partially frozen); fold together with strawberry glaze.  Spread over top layer of cake cubes to completely cover.  Refrigerate several hours or overnight.  Spoon into serving bowls and top with whipped cream, if desired.
