Oh @ChiliPepper I am sorry that your meal was bland and I appreciate the heads up as I just threw everything into the crockpot for tomorrow's meal.

I probably added more broth than it called for so maybe that "watered down" the spices.

Oh thank you for this @ChiliPepper . . . I threw in a tad less water as I also chucked a can of mushrooms in there too along with fresh carrots.  I just hope the meat is edible, that is what I call a win! . . . . Smiley Happy

The broth flavor was good, the meat itself was blah.

 

Maybe cube steaks are like that, I don't know. I don't usually buy them. 

 

I'm interested in how yours turns out.

When is the last time you made a recipe that was so good you said, OMG, this is one of the best things I've ever eaten???

Not a meal, but the Blueberry Corn Bread in the skillet was a DEFINITE YUM!  I think I posted it on previous pages...somewhere.  If anyone wants it, I can repost.  I am making that again this week.

 

Meredith's easy Buttermilk bisquits....Wowza!  Have made those several times.

 

Entree winner has to be:

 

Baked Chicken and Orzo

Ingredients

  • 1 stick butter, divided
  • 6 chicken breasts
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 shallot, chopped
  • 2 cloves garlic, minced
  • 1 lb mushrooms, sliced,
  • 1 tablespoon fresh sage, chopped
  • 1 16 oz package orzo
  • 32 oz chicken broth

Instructions

  1. Preheat oven to 375. In large skillet, melt 2 tablespoons of butter. Season chicken breast and add to butter in batches adding another 2 tablespoons in between. Brown chicken for 3 minutes, turn and brown the second side for 1 minute. Remove to a plate and keep warm.
  2. In a large stockpot, melt ¼ cup butter. Add shallots and garlic to butter, stirring constantly for 1 minute. Add mushrooms and sage. Cook until the mushrooms just begin to soften. Add orzo. Stir and cook until orzo is lightly toasted and fragrant.
  3. Pour orzo into a 13 x 9 baking dish. Top with chicken breast. Pour chicken stock over orzo and chicken. Bake for 45-50 minutes or until chicken reaches 165 degrees and liquid has been absorbed.

Dessert winner is definitely: 

Lemon Ricotta Strawberry Pie with Poppy Seed Shortbread Crust

 

 

BUT I just grabbed last week from Life, Love & Sugar recipes for a Canolli Layer Cake, a Canolli Tart & a Lemon Cheesecake that may give the above a run for its money!  I can't wait to try them!!!

Oh YUM!!! I was gonna make that chicken recipe this weekend but WM didn't have orzo!!! Can you believe it???!!!

 

I found some at Tops so it is in my future.

 

I don't remember seeing the blueberry corn bread. Seems like an odd combo. Good though huh???

Blueberry Buttermilk Cornbread

Serves: 8

 

Blueberry Buttermilk Cornbread recipe is full of fresh sweet blueberries, It's a classic buttermilk cornbread kicked up and makes a great side dish, breakfast or dessert.

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • ⅓ cup brown sugar
  • 3 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • ⅔ cup buttermilk
  • 2 cup blueberries
  • 3 tablespoon vegetable oil for pan

Instructions

  1. Preheat oven to 450 degrees F
  2. Spread 3 tablespoon vegetable oil in 9x9 inch pan or 9 inch round cast iron skillet.
  3. Mix cornmeal, flour, sugar, baking powder and salt.
  4. Beat eggs and buttermilk.
  5. Add egg mixture to flour mixture and mix until just combined.
  6. Fold in blueberries until just combined. Try not to over mix.
  1. Bake at 450 for 20 to 25 or until brown.

**MINE TOOK ONLY ABOUT 18 MINS AND WAS DONE
