I then found this recipe...very similar but with honey!  I am NOT a sweet person (in OH so MANY ways...LOLOL) but I wouldn't have minded a tad more sweetness to it!  Just a tad!

 

This recipe calls for 1/4 cup of honey besides 1/4 cup brown sugar which is maybe a lot....the first recipe calls for 1/3 cup brown only..no other sweetness.

 

I may try this recipe as is...or may throw a couple Tablespoons of honey in the first recipe...we shall see!  This recipe also has a blueberry topping...optional IMHO

 

Blueberry Buttermilk Cornbread with HONEY & Blueberry Topping

 

Cornbread

  • 1 1/4 cups flour
  • 1 1/4 cups cornmeal
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cups buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 1/4 cup light brown sugar
  • 1/4 cup honey
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1 cup blueberries

Blueberry Topping

  • 1 1/2 cups blueberries
  • pinch of salt
  • 2 to 3 Tbsp honey (to taste)
  • 1 1/2 Tbsp cornstarch
  • 1 1/2 Tbsp water
  1. Preheat oven to 400°F and grease a seasoned 10-inch cast iron skillet (or cake pan). Whisk together flour, cornmeal, baking powder, baking soda, and salt in a medium bowl; make a well in the center of the mixture. Combine buttermilk, eggs, brown sugar, and honey in a medium bowl; add to flour mixture and fold in until almost combined. Fold in melted butter and blueberries just until combined.
  2. Pour batter into prepared pan and smooth top with an offset spatula. Bake for 19 to 20 minutes, until golden and a toothpick inserted in the center comes out clean. Cool in skillet on a wire rack for 10 minutes; use a thin spatula to loosen cornbread from skillet before serving.
  3. For the blueberry topping, combine blueberries, salt, and honey in a saucepan over medium-high heat, stirring constantly. When mixture begins to bubble, reduce heat to low and simmer for 10 minutes, stirring occasionally. Whisk together cornstarch and water in a small bowl; add to fruit mixture and continue cooking until thickened, 1 or 2 minutes. Remove from heat and let cool slightly before serving.

Store leftover cornbread at room temperature and warm before serving. Store leftover blueberry topping in an airtight container in the refrigerator up to 1 week.

Hey @ChiliPepper !!

 

You have Tops?  Or Tops Never Stops, as it is called in our house!  My kids used to sing their commercial song every time we went there.

 

It is big in our area...lots of locations...but some pretty puny, like the one near me.  I still go there on occasion as they managed to carry things that Wegman's doesn't!

 

OR if I need something fast as it is a ghost town in there...and Wegman's is a zoo...always!

Yes we do. We used to have a full size one across town but it closed a couple of years ago. Last year however, one of the small, locally owned stores sold out (the guy retired I think) to Tops.

 

So yes, we have one but it is smaller. It's nice like yours though, I can pop in for a quick something. I don't have to walk 5 miles for a gallon of milk. Plus its on my way home from work & the other one was across town. 

 

We don't have a Wegman's though. There are several in the Syracuse area of course - nothing handy-handy for me.

I didn't realize you don't have a Wegman's!  Bummer!  Anything you want me to bring you when we meet?  LOL

 

So is your WM a Superstore w/ a big grocery section?  I always get the best prices on the staples at WM.  Had 3 bad meats though...but the produce has gotten MUCH better!

Not a meal, but the Blueberry Corn Bread in the skillet was a DEFINITE YUM!  I think I posted it on previous pages...somewhere.  If anyone wants it, I can repost.  I am making that again this week.

 

Meredith's easy Buttermilk bisquits....Wowza!  Have made those several times.

 

Entree winner has to be:

 

Baked Chicken and Orzo

Ingredients

  • 1 stick butter, divided
  • 6 chicken breasts
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 shallot, chopped
  • 2 cloves garlic, minced
  • 1 lb mushrooms, sliced,
  • 1 tablespoon fresh sage, chopped
  • 1 16 oz package orzo
  • 32 oz chicken broth

Instructions

  1. Preheat oven to 375. In large skillet, melt 2 tablespoons of butter. Season chicken breast and add to butter in batches adding another 2 tablespoons in between. Brown chicken for 3 minutes, turn and brown the second side for 1 minute. Remove to a plate and keep warm.
  2. In a large stockpot, melt ¼ cup butter. Add shallots and garlic to butter, stirring constantly for 1 minute. Add mushrooms and sage. Cook until the mushrooms just begin to soften. Add orzo. Stir and cook until orzo is lightly toasted and fragrant.
  3. Pour orzo into a 13 x 9 baking dish. Top with chicken breast. Pour chicken stock over orzo and chicken. Bake for 45-50 minutes or until chicken reaches 165 degrees and liquid has been absorbed.

BUT I just grabbed last week from Life, Love & Sugar recipes for a Canolli Layer Cake, a Canolli Tart & a Lemon Cheesecake that may give the above a run for its money!  I can't wait to try them!!!

Unfortunately, it's been so long that I can't even remember right now.  RATS!   Of course I haven't been up to cooking for a while now. The last time I remember that feeling at all was the first time I had the Shrimp Frite appetizer at Olive Garden back when it first went on the menu.  Before that it was my first glass of Thai Iced Tea.  [ It's not so much that I need to get out more as that we just need better restaurants out here in the Land That Atlanta Forgot. ]

Just a quick note but I believe one of SDP's dogs is going to give birth rather soon (Opal) and folks are quite sure she is going to have a lot of puppies so if you have a spare moment if you could say a quick prayer for her and her babies it would be most appreciated! . . . Heart

Yes, our WM is a nice Super Center. 

 

I do love the variety at Wegman's but the Syracuse suburb ones are always so loud & crowded. They are almost too big! 

 

Same thing with TJ's - too crowded.
