Not a fan of celery so never have it much except for specific things--then I buy only a few stalks. But I keep it in a green bag with a paper towel tossed in.

I wrap a piece of paper towel around it and put it back in original bag. Same with romane and other greens if I do not plan to use them in a day or two.

I clean and cut fresh celery into lengths that will fit in a wide mouth large jar (64 oz.).  I then wet and ring out a couple sheets of paper towel and stick them in the bottom f the jar. Then add the celery standing upright.  Put the lid on and stick the jar in the fridge.  The celery stays fresh and crunchy for a long time.

I do the exact same thing!  It is ready to eat and keeps fresh longer!

If we are using it for cooking it's diced up in the freezer for recipes.

We always have diced up onions, jalapeno peppers bell peppers, celery, tomatoes in the freezer.

Vegetables start losing nutrients when harvested. 

 

So.... When we keep that celery "fresh" for 4-6 weeks do we have anything left in it besides the drunch?

I wash mine, cut into the size I like, and then place the pieces in a Ziploc bag with paper towels included.

I do the same thing as you.  I buy only celery hearts and wash, dry and trim.  Cut up as needed for different recipes and store in Ziploc bags in the freezer. I also freeze onions, peppers and carrots. Haven't tried garlic yet and would only do a few cloves at first.

Also haven't done tomatoes as you have.

 

Rinsing and drying all before I trim, peel and cut, chop, dice for different uses.  I found how to do this on the Spruce website.  It saves me money and time.  I was skeptical at first but started with a small amount of each vegetable and it worked. Now I'm never without these items. With the peppers, I slice them for peppers, onions and sausage and dice them for chili and omelets.
