That looks yummy! Since I grind bacon into my meatloaf anyway I just run the oats through the grinder. I also use brown sugar oat squares in it.

1. Apple Meatloaf with Cider Ketchup

This updated version of Mom's meatloaf—with sweet shredded apples and tangy ketchup—is like fall in a dish.

Prep time : 20 min; Total 1 hr 20 min.; Servings= 6


what you need

1 pkt. SHAKE ‘N BAKE Seasoned Panko Seasoned Coating Mix

½ tsp. garlic powder

¼ tsp. onion powder

1 cup KRAFT Mexican Style Finely Shredded Four Cheese

¼ cup milk

3/4 lb. lean ground beef

3/4 lb. ground pork

1 large apple, shredded (about 1 cup)

2 Tbsp. chopped fresh parsley

1 Tbsp. chopped fresh thyme

1/3 cup apple cider

1/3 cup ketchup


make it

HEAT oven to 350°F.

COMBINE coating mix and seasonings in medium bowl; stir in cheese.

RESERVE 2 Tbsp. cheese mixture. Mix remaining cheese mixture with milk in large bowl. Add all remaining ingredients except apple cider and ketchup; mix just until blended.

SHAPE meat mixture into loaf in 13x9-inch baking dish sprayed with cooking spray.

BAKE 1 hour. Top with reserved cheese mixture; bake 2 min. or until cheese is melted.

MIX apple cider and ketchup; serve with meatloaf.

2. Favorite Meatloaf

Look no further for your new favorite meatloaf! Ours uses Stove Top stuffing instead of breadcrumbs and is filled with cheddar cheesy goodness.

Prep: 30 min. Total 1hr 40 min Servings = 8


what you need

1 large onion, finely chopped

¼ cup KRAFT Lite Zesty Italian Dressing

2 lb. extra-lean ground beef

3/4 cup ketchup, divided

1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

1 cup water

2 egg whites

1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese


make it

HEAT oven to 375°F.

COOK onions in dressing in skillet on medium heat 8 to 10 min. or until golden brown, stirring frequently. Cool slightly.

MIX meat, onions, 1/4 cup ketchup, stuffing mix, water and egg whites. Shape into 10x5-inch loaf in 13x9-inch baking dish; cover with remaining ketchup.

BAKE 55 min. to 1 hour or until done (160°F). Sprinkle with cheese; bake 2 min. or until melted.

MAKEOVER - HOW WE DID IT

We've made over this traditional entrée and cut more than half the fat by using extra-lean ground beef, and egg whites instead of whole eggs. As a result, this saves 6g of fat per serving.

HOW TO SAFELY PREPARE A MEATLOAF

After shaping a meatloaf with your hands, be sure to wash your hands thoroughly with soap and hot water for at least 20 sec. A quick rinse under the faucet is not enough to kill any harmful bacteria.

SUBSTITUTE

Prepare using STOVE TOP Lower Sodium Stuffing Mix for Chicken.


3. Cheesy Salsa-Mini Meatloaves

Meatloaf, meet tacos: The classic ground beef dinner favorite combines with tomato salsa and melty cheese. One of these minis has your name on it.

Prep: 15 min. Total 40 min Servings = 6 (2 muffins); or my suggestion 12 appetizers


what you need

1 lb. lean ground beef

1/2 cup finely chopped onions

1 egg

12 saltine crackers, finely crushed (about 1/2 cup)

1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese, divided

1 cup TACO BELL® Thick & Chunky Salsa, divided


make it

HEAT oven to 400ºF.

MIX first 4 ingredients with 1 cup cheese and 1/2 cup salsa.

PRESS into 12 muffin cups sprayed with cooking spray. Use back of spoon to make indentation in center of each. Place muffin pan on foil-covered baking sheet.

BAKE 20 to 25 min. or until meatloaves are done (160°F). Top with remaining salsa and cheese; bake 3 min. or until cheese is melted.

SERVING SUGGESTION

Serve with a mixed green salad and slice of whole wheat bread to round out the meal.

SPECIAL EXTRA

This is Pioneer Woman's Bacon Wrapped Meatloaf recipe:

  • 1 cup Whole Milk
  • 6 slices White Bread
  • 2 pounds Ground Beef
  • 1 cup (heaping) Freshly Grated Parmesan Cheese
  • 1/4 teaspoon Seasoned Salt
  • 3/4 teaspoons Salt
  • Freshly Ground Black Pepper
  • 1/3 cup Minced Flat-leaf Parsley
  • 4 whole Eggs, Beaten
  • 10 slices Thin/regular Bacon
  • Sauce:
  • 1-1/2 cup Ketchup
  • 1/3 cup Brown Sugar
  • 1 teaspoon Dry Mustard
  • Tabasco To Taste

Preheat oven to 350 degrees. Pour milk over the bread slices. Allow it to soak in for several minutes.

Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.

With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)

Lay bacon slices over the top, tucking them underneath the meatloaf.

Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.

Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.

Once when making a meatloaf my mother didn't have any of the typical fillers handy, so she used crushed Fritos. Best meatloaf she ever made, and I have made it that way ever since.

I can't imagine any reason to put heavy cream into an already calorie and fat laden recipe.

I make an old Mr Food meatloaf with crushed regular Doritos........{#emotions_dlg.thumbup1}

I use Sweet Baby Ray's Original BBQ sauce.

Lately I've been making it as burgers instead of a loaf. DH loves as a sandwich.

It's in the extra cookbook, but I couldn't justify buying it for that. Hopefully someone will share. I got a lot of recipes on Pinterest & google for rice cookers.
