I returned to the kitchen! After a few weeks of sweet potatoes and cucumber salad, I broke down and went shopping for real food and made my first ever version of shepard's pie. And it is delicious if I say so myself. I have my dinner for the week.
Meatloaf sound so good too. I haven't had that in a while and I need to start emptying my freezer of vegetable bags. That is next up. I already have the ground turkey and this weekend I shall mix.
And not that this is cooking but I found pumpkin spice tea in Walmart the other night. It's not bad! Black tea with pumpkin spices. It's a nice switch from my usual peppermint. I think it's from Bigelow if anyone wants to look it up. Or I may just be late to the party.

Today, it is a grey cool day, so decided to bake mini pumpkin, walnut, and raisin loaves, thirty-six to be exact, and now I am stocked up for a month or so. They freeze beautifully, and taste great right out of the freezer, unlike some that have to be thawed.
Last night, I made spaghetti and meat patties/blops. Usually, during the frying, the meatballs lose their shape, so this time thought I would bypass the work of forming them and just pushed some off of a spoon with a smaller spoon, and it worked perfectly, mini patties.
I have leftover chicken from a Sunday roasted chicken so may make a broth, then add noodles and chicken for dinner, good night for soup.

@spix Here it is. This makes one regular size loaf,9 x 5, but is great for mini loaves. A double recipe makes eighteen minis, so one should make nine, or if the loaf pans are a bit bigger than mini, less, but I am sure you can figure it out. I always add more nuts and raisins than called for. Bake for 55-60 minutes, but I would check sooner, and mini loaves take only twenty-five minutes or less to bake.

Another weird meal perhaps but good. Orange chicken, baby lima beans and garlic and pepper fried potatoes - very good.
It is plumb cold. Brrr. However, as usual, never fear, going to be in the 90s tomorrow. Sigh.

Back to work tomorrow, but today was needed. Saw plenty of wildlife, caught plenty of fish and just enjoyed being alone with DH. We needed it. Now he has fish to eat, I have fish to cook and we will prepare for the holidays ahead. Lordy ... give us strength. LOL
