My whole family is doing weight watchers right now so I think we will keep it simple - ham and green bean salad.  The green bean salad is my grandmother's recipie.  It is canned green beans, olive oil, red wine vinegar, garlic, dried mint, salt and pepper- yum.

Cute and easy for kids to make and enjoy at Easter!

Maybe need some frosting to hold those tires on!

Here, I can buy a brown sugar spiral cut ham.  I like them ever so much more than honey ham, although I love honey.

 

Do you have brown sugar spiral cut hams where you live?


 

I've always purchased the Kansas City hams.  They are brown sugar and spiral, and I find them to be excellent.  The only thing is - there are probably lots of hams that are cheaper but I rationalize the price by the fact that there are a zillion servings. 

 

It does come with a honey glaze packet but I never use that.  I make my own and it doesn't have honey in it (I don't like honey).

 

After I've made it for that one day's dinner, I pack up several packets of slices that I vacuum seal and freeze so, throughout the year, I can have some by just thawing one packet that usually had a few servings in it.

 

I've also vac-sealed the bone, with some ham still on it, for when I make split pea soup but don't have plans to make it any time soon.  That way it's available at a later time w/o suffering degradation since it's vac-sealed and frozen.

I am not cooking anything special.  Getting my second Covid shot the day before, and anticipating not feeling 100% the next day.  I have some chicken soup in the freezer!  

My brother-in-law usually brings me a meal on holidays....if he does that will be lovely, but I never want him to feel obligated.  If I feel good and need to make my own dinner, I will probably do a chicken breast, some stuffing and green beans.  I think I have a can of cranberries the cupboard, too.
