Someone, no one will confess... ate almost a whole batch of those frosted Italian cookies. Tomorrow, I will have to make them all over again. I should have hidden everything. Right now, all of my containers are stacked in my dining room. I need somewhere to store them all.

@Happy2BHere When I make fudge, I use a candy thermometer. When I cook the mixture according to the recipe..like 3 minutes, it either sets up too fast and is crumbly or never set up at all.
I cook the mixture to the soft ball stage. I works really well.

@house_cat your recipe for oreo cheesecake...does it call for an oreo cookie in the bottom of a cupcake wrapper....add cheese cake mixture and crushed oreo's on top?
I came across the recipe and thought I would make a batch, sounded good and would look pretty out on a buffet table....I think it was on the all recipes site but not sure.

No. It's really not a particular recipe. I use my standard cheese cake recipe, but I make the crust from oreo crumbs, rather than graham crackers and I drizzle the top with chocolate.

1/2 cup of sugar
1 8 ounce brick of cream cheese
1 8 ounce package of whipped topping (thawed)
cup cake liners
oreo cookies
sprinkles
Mix the sugar and cream cheese, fold in the mixed topping, I added a dash of vanilla for taste and a little milk to thin it out.
Line each cup cake liner with an oreo, scooping the cream cheese mixture, add sprinkles on top
Refrigerate 8-10 hours
(we tasted on Sat and it was good, we had them last night and the cookie was sofening and tasted even better)

Well, this is 12/21, but I am baking. I have in two 9 x 13 "7 layer cookies" and will do fudge tomorrow which is my only day off until Christmas.
When you use Ghirardelli semi sweet chocolate bits, you won't believe the flavor difference from Nestlies chocolate!!!!! It was a shock!!!

I always use Ghiradelli chocolate vs. Nestle. I know they are more expensive but you're right ...well worth it! When Publix has them BOGO I stock up🙂
