I made a cheesecake yesterday, with an oreo crust.  It's in the fridge to be served on Christmas Eve.  Today, my kids will be here with their dogs and we're baking doggie biscuits with peanut butter and pumpkin. Tomorrow I'll be baking an apple pie.  If I get a chance in there somewhere, I might make my dad's Italian Christmas cookies, but with all the food prep and guests, that might not happen.

I thought about it but I'm off Monday and Tuesday so I'll have all day to bake Christmas.  I have cookie dough in the fridge, I am going to bake some for hubby to have when he gets home from work.

When you use Ghirardelli semi sweet chocolate bits, you won't believe the flavor difference from Nestlies chocolate!!!!!  It was a shock!!!

It's just these simple cookies - they aren't technically Christmas cookies, but my dad always made them on Christmas.   I've posted the recipe on another thread, but I'll add it to this one, too.

@colliemom4 They're very easy to do and wonderful to introduce a child to cooking.  

 

Seven Layer or Magic Bars

 

1 stick butter, melted

1 C graham cracker crumbs

1 9 oz coconut

12 oz butterscotch chips

 6 oz semi sweet chocolate chips (I use 12 oz because I don't want the butterscotch flavor to be the strongest)

1 can sweetened condensed milk like Eagle Brand

1 C chopped pecans

 

I line a 9 x 13 baking pan with aluminum foil with about 6 inches coming out of each end which will later be handles.

 

Spray the inside of the lined pan, esp. in the corners and up the sides.

 

In small bowl melt the butter.

Mix with graham cracker crumbs.

Press into bottom of bake sheet completely covering.

pour on Coconut

             Butterscotch chips

             semi sweet chocolate chips

             chopped pecans

             drizzle sweetened condensed milk back in forth covering all the                       surface you can vertically, then horizontally. 

 

Bake at 350 degrees for 30 minutes.

Cool completely.

Place cutting board in front of bake pan.

Using the aluminum foil "handles" you should be able to geltly lift and place on the cutting board to cut.

 

I use this method for fudge and all bar cookies.

I baked a sour cream pound cake this afternoon. A few days ago, I made a cheesecake. I'm having family over for lunch and gift exchange on Christmas Eve.
