Just wash them well (I would soak them in cold water for a few hours), remove the "toenails" with kitchen shears and cook like any bones/meat for soup Smiley Happy

@summerwind I can make bone broth from them. From what I’m seeing online, you boil them, peel the skin off and cut off the nails (some leave the nails now) but not me. It seemed like a good idea at the time. But I bought them and I’m going to do this. I just hope I don’t get queasy 😳

@SandPiper, I'm sure it'll add lots of flavor and nutrition to your broth. Not that I'd try it myself at this point, but I'd be interested in how the experience/taste works for you. Never know when someone else's knowledge/experience can be passed on.

Ham hocks are good in dutch oven of northern beans after beans are cooked, remove the hocks, can eat the pork from the hock and put in beans.

Skin adds a lot of flavor to broths ands soups, so I wouldn't skin them... then you can refrigerate your broth, and if there is a lot of fat accumulated on the top, just remove it Smiley Happy
