I made a strawberry layered dessert (keto version of strawberry pretzel jello). I intentionally left some of the cream filling in the mixing bowl, got my rubber spatula, scraped the bowl clean, and ate the whole spatula full of cream filling in one bite! I have zero guilt.

Essentially you take a store bought angel food cake, put it in a round plastic bowl with a lid that is big enough to accommodate the cake with a ring of jello around it.
Poke holes in the top of the cake. Mix a large box of strawberry jello per directions. (I use 2 because we like jello). Pour jello over the top of the cake to create the poke cake effect. I added cut up strawberries to the last of the jello and poured it into the center and around the sides. Cover and refrigerate.
To serve, remove lid and slice thru the jello and cake, then top with Cool Whip. This dessert never lasts long with my family.
@RedTop , You made me think of a dessert that I made all of the time back in the day. I made a box mix angel food cake and when it was cool I sliced the top off and cut a trench in the bottom. Then I whipped heavy cream , sugar and cocoa and fill ed the trench and frosted with the rest of the cocoa cream. I should make this again.

Being a sensible person, I'd add a big scoop of vanilla ice cream to the strawberrry shortcake. I have to make sure I get a serving of dairy, after all. lol

@QVCkitty1 - From what I'd guess about your recipe, it sounds like you actually just had breakfast for dinner: a nice balance of grains, fruit, and dairy. Perfect!

Used to eat this annually - my BF liked it on bisquits, my mother would buy those little spongy round cakes at the store.
