I was looking on youtube and Collard Valley Cooks did a 9 egg custard pie! Because of today's health concerns, I was shocked!!!
If I needed a recipe, I'd go to MeMe's Kitchen.

@ECBG Why are you shocked? How many people are going to eat a slice of pie? Six? Eight? Eggs are in lots of things, along with other fatty substances. It's ok to have an egg.
The fat in the crust and the sugar are probably worse for you than the eggs.

It does seem like a lot—I wouldn't be as concerned from a health perspective, but I do think that's going to be one eggy-tasting custard!

That would only be about one egg per portion. They are a great source of protein. I think the attitude that they're a health hazard has dimished considerably. I haven't heard any warning about eating eggs for years.

I'd be way more concerned about the 3 cups of sugar in the recipe. It looks like she got six large slices from the pie. That's 1/2 cup of sugar per slice. Whew!

Eggs are a great source of protien, for sure I would be more concerned about the sugar.

There's no reason a custard needs that much sugar. I'd reduce it considerably and substitute artificial sweetener for half.
