My mom raised us on boiled corned beef, cabbage, carrots and potatoes every St Paddys day since my dad was a wee bit o Irish! Even tho dad is gone 50 yrs now and us girls are grown she still makes herself corned beef and carrots but now she bakes her cb w/ brown sugar on top in tin foil in the oven. Since I married 33 yrs ago I make it boiled with the c,c&p's every yr in a large oval crockpot w/o fail, I look so forward to it each spring. My guys love it too, with horseradish on the side! I usually make 2 c/b's so I have leftovers for sandwichs on rye AND buy one for the freezer. Too expensive any other time of the year. One of my very favorite meals, thanks mom!
