when i think cold weather soup is the first food i think of and tomorrow maria is making chicken chowder. its paula deens recipe.

Cold weather!  Yum!  Make mine tomatos and garlic!  This is what I love and reheats in servings in the microwave SO moist!  Everyone loves it!

Noodle Bake

 

1 ½ lbs. high quality ground beef

1 ½ tsp garlic

2 cans tomato sauce

1 pkg medium egg noodles

1 Tbsp butter, plus 2 Tbsp.

1 16 oz sour cream

1 lg softened cream cheese

Optional: 2 Tbsp. chives

 

In large skillet, brown and well drain ground beef.

Add tomato sauce, and garlic and simmer about 20 minutes .

 

Butter 3 qt casserole and place a side.

 

In bowl, mix sour cream and softened cream cheese.

(I use my hand mixer).

Hand stir chives in.

 

Cook egg noodles aldente with oil in the water to prevent clumping.

Drain and toss lightly with 2 tbsp butter.

 

 

In buttered 3 qt casserole layer:

 

1/2 of the noodles

1/2 of the cheese mixture

1/2 of the meat mixture.

 

Repeat layers in same order.

 

Sprinkle with cheddar cheese.

 

Bake at 350 degrees for about 45 min.  Cheese may be covered to prevent browning.

May be made a day ahead, refrigerated and cooked for 1 hour.

Chili with nice crusty bread

 

Beef stew

 

Beef Stroganoff over egg noodles

 

Homemade soups, particularly chicken noodle 

 

Stuffed Cabbage (grandma's recipe)

 

Meatloaf and mashed potatoes

 

Chicken and Dumplings

 

Tuna Noodle Casserole

I never thought of it but we pretty much eat the same way year round.   I don't make heavier meals just because it's cold outside.  I did back in my sahm days when I had all day to cook.  I also think I cared more about planning meals back then.  I am going to make a meatloaf next week, with mac&cheese.  I love meatloaf and I haven't made one in a while.

I'm going to slow roast a pork loin tomorrow with root vegetables. I love this time of year for cooking.

Chili (2 Alarm brand spices or my mix that is close to it)

 

Stew over biscuits

 

Big pot of pinto beans with lots of ham hocks or ham and a skillet full of cornbread, with a side of collards. 

 

King Ranch Casserole or Chicken Enchiladas!

In our house we love potato soup and cornbread, a pot of beans and cornbread, or split pea soup.
