I buy them just slightly underripe and refrigerate them when I get home.  They do not continue to ripen.

 

Obviously, I don't eat the skin so it really doesn't matter if it gets brown.   

 

If you don't want them cold, just let one sit on the counter for an hour before eating.

We eat bananas every day.  I try to buy pretty green.  I keep one or two in my fruit bowl and put the rest on the window seat in our dining room next to the window where it is cool.  They do not rippen so quickly.

We eat them every day.  I have made peace with the fact that some get thrown away because they are overripe.  I can't freeze them all, wouldn't use them, and besides, they are too inexpensive to worry about, when you count the benefits we get from having them.

A banana hanger helps a lot.  Don't lay them down, they're too sensitive.  Also put them in the coolest spot in your kitchen.

 

My workmake and I used to always ask each other about our bananas - do you think it's ripe yet?  We both hated ones that were too ripe and agreed there is about an hour window when it is just right!
