Re: Welcome to the August Exercise Thread

Hi, all! I need a nap! Shocker!! Smiley Wink Moving this morning wasn't too bad, but I was sure sweating. Had to run a few errands after lunch and I'm going to take a quick nap then do Pilates for a little bit. Patty, so sorry about your son. I'll be praying. Please keep us updated. Bopper and Nomless, I'll post the recipe below. I can't put links or paragraphs with the iPad (well, I can do paragraphs, but it would take forever and a day to insert all the stuff for a recipe!).

Re: Welcome to the August Exercise Thread

Ingredients 5 tablespoons extra-virgin olive oil 2 teaspoons kosher salt 1/2 teaspoon freshly ground black pepper 1 pound extra-large shrimp, peeled and deveined 1 small fennel bulb, chopped (about 1 cup) 1 small onion, chopped (about 1 cup) 1 large clove garlic, smashed, peeled, chopped 1 cup Arborio rice (about 6 1/2 ounces) 1/4 cup dry white wine 3 cups low-sodium chicken broth, plus extra as needed 1/4 cup fresh lemon juice (from 1 large lemon) Zest of 1 large lemon 3 cups arugula Directions Heat 2 tablespoons of the oil in a heavy large saucepan over medium heat. Add the shrimp and sprinkle with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Cook until the shrimp are just opaque in the center, about 3 minutes. Remove the pan from the heat. Transfer the shrimp and juices to a bowl to cool. Add the remaining 3 tablespoons oil to the pan. Add the fennel and onions. Cook until tender, about 4 minutes. Add the garlic and cook until aromatic, 30 seconds. Add the rice. Stir until well coated and translucent in spots, about 2 minutes. Add the wine. Cook until the wine is absorbed, stirring often, about 2 minutes. Add the broth, lemon juice, zest, and the remaining 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Increase the heat and bring to a boil, stirring often. Reduce the heat to medium-low. Simmer until the rice is just tender but still has some bite and the risotto is creamy, stirring often, 13 to 14 minutes. Mix in the arugula. Stir until the arugula wilts, about 30 seconds. Add the shrimp. Mix in additional broth if needed, 1/4 cup at a time, until the risotto is creamy. Spoon the risotto into 4 shallow soup bowls. Thanks, Future. It looks good. Fennel is in it...I love cooked fennel (but not raw). I've never thought of putting it in risotto.

Re: Welcome to the August Exercise Thread

FUTURE, I need a nap too!

I actually got in a small work-out this morning(walked and ran dogs a mile, did some stairs, and some weights, squats, planks, and burpees) before all H E double hockey sticks broke out.

Anyway, long story short...spent morning in ER, ds has been admitted again. He's pretty bad...they have no idea how the heck he has been working for the past 3 weeks and traveled to our home this past weekend. He was in denial, so afraid of doing these darn steroids again.{#emotions_dlg.sad} It breaks my heart.

He's lost a lot of blood and cat scan was a mess. So...IV high-dose steroids, antibiotics and fluids for a couple of days(he said he's going back to work on Monday...cough, cough), will start new drug next week but they will keep him on the 6MP as well.

He's going to do the one with weekly shots instead of going in for the infusions...thinks it will be much easier just to do it himself and not have to go sit in hospital for 2 hours or so. Basically same drug.

I'm home spending some time with pups, then will go spend the night. I told his wife that I won't sleep either place so I might as well stay up there. I have to be in control anyway.Wink{#emotions_dlg.rolleyes} And bless her heart, she lets me.{#emotions_dlg.laugh}

Looks like I'll be up here a while...I won't leave while he's on the steroids because of how he reacts to them and I want to make sure he doesn't have a bad reaction to the new med. This too shall pass...right?{#emotions_dlg.crying}

Re: Welcome to the August Exercise Thread

Oh, dear, hugs, Patty. Thanks for letting us know what's going on. I suppose ds is unhappy about being in the hospital, but that's where he needs to be. Thank goodness you're able to be there. Ddil will appreciate the support as much as ds, and you'll know first hand what's going on. Hugs and prayers for all of you. I'm so sorry you all have to deal with this. Good wishes that things start looking better very soon. I hope dh can manage without you.

Re: Welcome to the August Exercise Thread

Patty, you know that I read what all you girls do to keep your bodies in shape and since I can't walk that well I envy you all. I am so sorry about your son and all he has gone through so if you don't mind I am going to ask at Seraphic Mass Assoc. in Pittsburgh to have some prayers said for your son. I have belonged there for a long time and find much comfort when I ask for prayers from the Friars and Priests. Hope that things change for the better for all of you. That little Lucy of yours is a real buddy for you.
