I post this recipe every year around this time.  It is a bog hit at our house.  I hope that you enjoy it as much as we do.

 

                                      

 

                                        ZUCCHINI BAKE

 

 

 

 

3 cups thinly sliced zucchini

1 cup Bisquick

½ cup chopped onion

½ cup grated Parmesan cheese

2 tablespoons chopped parsley

½ teaspoon salt

1 clove garlic, chopped

½ cup salad oil

4 eggs, beaten

 

 

 

Mix together in a large bowl. Pour into a 13X9 inch pan. Bake at 350 for about ½ hour or until lightly browned on top.

I can personally testify as to how delicious this recipe is, I love it and make it all the time in the summer.  Thanks for reposting this and I encourage people to please try it.  You will not be sorry!

Sorry I haven't told you sooner luvs, but I too have made this often, love it, serve it in small squares as appetizers, quick lunch, snack, etc Wonderful!

This really is so good ... several years ago, my brother and SIL came for dinner ... I had this sitting on my island with saran wrap over top ... I was busy putting dinner on the table ... my brother decided to "taste" this before sitting down and before you know it, almost half of it was gone before they finally sat down to dinner ...

Hi humpty dumpty....... glad to hear that you and your family enjoy it.  Great story about your brother.  DH asks me to make it often even in the Winter months.
