Re: Would like something different for Christmas dinner

We do not have a traditional Christmas meal in this house.  Growing up it was ALWAYS a fresh whole ham and potato salad (we raised our own pork).   I have never been a big ham eater!  My husband also grew up eating ham for Christmas.

We mix it up with different entrees:  lasagna, tacos and burritos, fried chicken, steak and baked potatoes, pizza, beef tenderloin, subs, and even hamburgers.

If you're serving a meat / potatos crowd . A crown roast of pork with pinapple stuffing  and roasted  butternut squash ,

Just make  stuffing per usual receipe chicken broth, bread crums , ususal poultry seasoning , celery onions , butter  add a large  drained can of  chopped pieces of pinapple in natural juices .   stuff pork or cook separate .  Sprinkle a little cayenne pepper and nutmeg ontop of the butternut squash  and roast in the oven.

We're thinking of roasting cornish hens, roasted brussels sprouts bacon & onion, stuffing with apples bacon & wild rice.

And already prepared Bob Evans sour cream and chives mashed potatoes.

May substitute filets for the cornish hens as an option.

Spoiler

Yeas ago I made cornish game hens, I served them over a bed of basmait rice and poured a bit of pomegranate syrup over the plate.  It was delicious but when I was cleaning up it seemed like there was a lot of waste giving everyone their own hen, maybe cut in half?  I also had younger kids so that could have been why.

Re: Would like something different for Christmas dinner

My mother was a phenomenal cook.  On Christmas Eve she would make crab imperial and cook a rib roast for Christmas Day.  Easter was ham and of course Turkey for Thanksgiving.  Christmas Eve was fancy because my grandparents came to our house on that night and to my cousins on Christmas Day, we joined for dessert!

I still make the rib roast on Christmas for the two of us.  Pork on New Year's Day.

I think whatever you feel or ask the family!  Lots of great ideas on here.

I always made a Prime Rib and creamy Horseradish sauce on the side and au jus along with potatoes, veggies. Homemade cookies, cheese cake for dessert.

Re: Would like something different for Christmas dinner

Christmas dinner was always at our house, but because my husband died in June I debated to host dinner.  I decided to do it, but it's going to be different.  I decided I will make only the main dish and maybe something else.  Then it's up to the guests to bring something.  We got it all figured out and assigned at Thanksgiving dinner yesterday and everything is all set.  I'm really looking forward to this and positive it'll be a success.

If the usual is unknown, then how does anyone know what's different?

Hungry for some yummy Prime Rib. DH will make it in the Ron Popeil rotisserie. It turns out so good cooked that way.

We do the same thing but for New Years, love the Ron Popeil for prime rib.  We have a local shop that has their own prime rib seasoning and put that all over the whole roast.   Love that machine and it only comes out New Years lol.

Do you use a dry rub or marinade?
