We always just rinsed and drained it good. Fried until lightly brown in bacon grease or butter. Used as a side dish like rice or potatoes.

My favorite way to eat hominy was when Grandma drained and fried it with cut up bacon, ham, or sausage, onions and peppers. We had eggs and biscuits with it for breakfast, or beans and cornbread for supper. I haven't bought any for years tho, as I doubt my family would like it.

We ate it with meat but not the onions and peppers. I don't remember eating them....Daddy must not have liked them!
Fished a lot and ate fresh water fish mostly.
Ate lots of big dried limas, cornbread and chocolate cake!

I just bought some big dried limas a couple of days ago. It is something
I crave when the weather gets cool.

I can't eat them now, too much fiber, but I have eaten my share and then some! Love them with fresh onion and cornbread! Enjoy.
