UPDATE.....☹......Hominy recipe

[ Edited ]

Well, I was anxious to try hominy and this recipe.  I decided to try it today.  All I can say is that I'm glad I only ordered 4 cans of hominy.

This was a total bust for me.  I don't know if it was the recipe or if hominy is an "acquired taste", but I won't make this again.  I just did not like it.  To me the hominy tastes like musty mush with a hint of corn favor.  😝😩😕

On the bright side, I can say I tried something new and I have 2 cans of hominy that I will donate to the town food pantry.

@ALRATIBAI looked for more recipes to use with all that hominy we ordered.  😀  I thought this one looked good as a side dish.

Re: Hominy recipe

After most of the garden produce had been canned or frozen, hominy was the last thing my farm Grandma canned for winter.

She would count the empty canning jars and tell Grandpa how many bushels of feed corn to pull.   It took hours for us to shell that corn and my thumbs would be so sore and stained from the process.

I'd been taught from an early age never to touch the can of lye, as it was poison, but once the corn was shelled, Grandma put it into the crock to soak in lye water to start turning it into hominy.

@RedTop.  I think they no longer use lye in the process.  I never ate any homemade hominy.

That recipe sounds good but I'd use something other than Cajun seasoning.

My Daddy only ever fried it in bacon grease and added pepper.  If there was any left the next morning he would warm it up and put a fried egg on top. I was walking in high cotton and didn't even know.

@Kachina624

Lime is most likely the active agent used now in turning that field corn into hominy.

@RedTop.  I read that food-grade lye is virtually non-available nowadays and very expensive.

@RedTop  I looked up info on hominy last night to learn more about it and did read on one of the sites that lime is used, the mineral, not the fruit.

Your story about shelling the hominy is so interesting!

@RedTop  Yep that's what the frozen package from Bueno in my freezer says...corn...water and lime...DW..90559620-BC0C-41AC-8A94-605D44476FB8.jpeg

This is what is available at our local grocery stores, I like to add to soups, I rinse it out first before using.
