Soup lovers I tried this yesterday and really enjoyed it. Pair this with crusty bread or a half sandwich and you are all set.
Jimmy Dean's Sausage and Potato Soup
1 lb. Jimmy Dean hot and spicy sausage, cooked, crumbled and drained
3 medium baking potatoes, cooked in the microwave in advance, cooled, peeled and cut into 1' cubes
¼ cup butter
½ cup onion, chopped
¼ cup all purpose flour
3 cups chicken broth
¼ tsp thyme
2 cups milk ( I use whole milk)
1 cup half-and-half
¾ cup Parmesan cheese
½ tsp salt
½ tsp pepper ( maybe even more because I like lots of pepper!)
Melt butter in a large saucepan over medium heat. Add onions, saute until tender.
Stir in flour and cook on medium for 1 minute, stirring constantly.
Gradually stir in chicken broth, bring to a boil; stirring frequently until thickened and smooth. Stir in milk, half-and-half, thyme, sausage and potatoes. Bring to a boil, reduce heat and simmer uncovered for 15 minutes. Stir in Parmesan cheese. Serve hot.

@Black Pony Would regular Jimmy Dean sausage be okay? We're not fond of hot & spicy. I'd also use less pepper. Thank you!

It's ok to taylor the recipe to your liking.

The original recipe calls for regular sausage so yes that would work. I believe that this recipe is quite adjustable in several ways, you could use a different cheese, you could use lowfat milk, you could add parsley or other seasonings too.

@Black Pony I love soups! I made yours and it was so mmmmm mm good! I used Jimmy Dean's Italian Breakfast Sausage instead of the hot and spicy one. I always keep Aldi's canned sliced potatoes on hand so I used them instead of fresh peeled potatoes which made it even more of a breeze to prepare your recipe. Thanks for sharing it!!!
