How about just going to Jersey Mikes or a sub shop someone likes and pick up their party subs?  They're small, comes in a box.  Just order what you need.  Or maybe a grocery stores that does deli platters?


@ScrapHappy You nailed it!  The one hear makes great sandwiches and you won't get by much if any cheaper doing it yourself.

I think Sloppy Joes or the Pulled Pork or Chicken sounds good.  She could even do two or all three.

Part of the problem here is that so many things are so messy and serving the food is sometimes more work than making them, plus the cleanup.  And serving areas have to be kept clean or it looks like there's been a food fight. 

 

For 40?  I'd go get sandwiches.  Get a few vegetarian if you need to, and maybe do chicken and club type for a variety.  That means there is no dragging things out, having to keep the serving area clean from drippy things during the party, or as much cleanup.  If I were a guest I'd be happiest with that route too.
