Here's a recipe for a speedy and delicious rice pudding. Serves 8 to 10

4 cups milk

1 egg, beaten

1 3-oz package vanilla cook and serve pudding mix

1 cup, uncooked Minute Rice (or store brand)

1/4 cup raisins, optional

1/4 teaspooon ground cinnamon

1/8 teaspoon ground nutmeg

1) Combine milk, egg and pudding mix in 1 1/2 or 2 qt. saucepan. Add rice and raisins.

2) Bring to a boil over medium heat stirring constantly

3) Remove from heat and cool 5 minutes stirring twice

4) Serve immediately or cover with plastic wrap

5) Sprinkle with cinnamon and nutmeg before serving

Delicious warm or cold (refrigerate leftovers)
