AMISH WHITE BREAD

2 c. warm water (110 degrees)
1 1/2 tsp. salt
2/3 c. sugar
1/4 c. vegetable oil
1 1/2 Tbsp. active dry yeast
6 c. bread flour

In a large bowl, dissolve the sugar in warm water, then stir in yeast. Allow to proof until yeast resembles a creamy foam. Mix salt and oil into the yeast mixture. Mix in flour one cup at a time.

Turn dough out onto lightly floured surface; knead till smooth. Place dough in well oiled bowl; turn to coat. Cover and let rise in a warm place until doubled, about 1 hour.

Punch dough down, knead a few times. Divide dough in half. Shape into loaves; place into 2 well oiled 9x5-inch loaf pans. Cover and allow to rise 30 minutes or until dough has risen about 1" above pan edge.

Bake @ 350 degrees for 30 minutes. Remove from pans. (After removing the bread from the pans, I immediately brushed the tops lightly with melted butter.)

*This is also great using 1/2 milk for the liquid and cutting the sugar amount in half-so that would be 1 c. milk, 1 c. water and 1/3 c. sugar. It makes a loaves that are a little less sweet.
