This morning I made a large batch of roasted vegetables lining the pans with parchment paper. I've never used parchment paper before when I've roasted vegetables but feeling lazy I thought it would help with the clean up and it did. However, the vegetables were stuck to the paper and I had to peel them off individually. Luckily they came out fine, but what a chore peeling the vegetables from the paper. Do you use parchment paper for this? What did I do wrong?

I made my own recipe for veggies using sliced yellow squash, zuchinni,onions,mushrooms,grape tomatoes and diced red peppers and preseasoned with garlic powder,Mrs Dash but I saute them in Olive oil. I used parchment paper for my baked walnut recipe but I spread the paper with margerine or olive oil and they don't stick You might try that. Hope that helps

@Goodie2shoes Your receipe is like mine minus the mushrooms. I toss mine with olive oil and roast at 425 for 30 minutes. Sautéing them isn't roasting. Good idea for your walnut receipe.

It might depend on how high your heat was........Parchment paper ratings are from 420 degrees to 450 degrees. Assuming since you are roasting veggies, that you used some oil on the veggies first.

Love parchment paper and use it soooo much. I do have to give it a light spray Pam or olive oil or smear it with some butter.

I roast vegetables on tin foil sprayed with a little olive oil. No sticking.

I thought that since the veggies were tossed in olive oil that would have been enough when put on the parchment, guess not.

I do this all the time and the veggies never stick, maybe not enough olive oil?

I line a heavy bake sheet with all foil and spray with olive oil. Then spray vegetable tops after they're placed.
Never had an issue.
