That sounds like the recipe in post 3... If you don't turn it upside down the top becomes custards..it's really good and easy...try it!!!!

Rhubarb Bars ---350 degree oven-----bake 35 minutes

4 cups diced rhubarb

1 small pkg dry strawberry jello

1 cup white sugar

1 white cake mix(straight from box-dry)

1/2 cup melted butter

Cover bottom of a greased 9x13 pan with the rhubarb

Sprinkle jello evenly over rhubarb

Sprinkle sugar evenly next

Repeat with dry cake mix

Drizzle melted butter over all

Tried & true, made many times -good & easy

I got this recipe from my mother-in-law and she got it from the Farm Journal magazine. I have made this dozens of times over the years and it never fails to be delicious. I make it in a pie tin and cut it in wedges. I have served it as a dessert with ice cream or as a coffee cake at brunch.

Evelyn's Rhubarb Cake

1-1/2 cups light brown sugar
1/2 cup shortening (Crisco)
1 egg, unbeaten
1 cup sour milk (add 1-1/2 tbsp. lemon juice to 1 cup milk and wait 10 minutes)
3 cups fresh rhubarb, cut in 1/2" pieces)
1 tsp. baking soda
2 cups flour
1 tsp. vanilla

Sprinkle top of batter with: 1/2 cup sugar plus 1 tsp. cinnamon

Bake at 350 degrees for 35 minutes. Test to be sure it is done.

Makes two ungreased 9" round cakes or pie tins or one 9"x13" cake.

Serve with ice cream or as a coffee cake.

RHUBARB AND HEAVY CREAM

4 cUPS RHUBARB, CUT INTO 1" PIECES

1 cUP WATER

1 1/2 - 1 cUPS WHITE OR BROWN SUGAR

2-4 TABLESPOONS MINUTE TAPIOCA

Place rhubarb in pan with water, tapioca and 1 cup sugar. Cover and cook slowly until soft.

Stir in additional sugar, to taste. Cook 5 minutes. Chill and serve with cream or whipped topping.

Here are a couple more recipes for you.

Rhubarb Strawberry Crisp Recipe

(8 servings)

2 large stalks rhubarb, chopped (about 3 cups)

1/2 pound strawberries, hulled and sliced

2 tablespoons honey

1 tablespoon cornstarch (optional)

1 cup rolled oats

1/4 cup packed brown sugar

1 teaspoon ground cinnamon

2 tablespoons butter or coconut oil

Preheat the oven to 350 degrees. In a medium bowl mix together rhubarb, strawberries, and honey. Add cornstarch if you want a thick "pie-like" consistency. Spoon into ramekins ensuring a good mix of strawberries and rhubarb in each one. In the same bowl, mix oats, sugar, cinnamon, and butter until crumbly. Spread over the top of the fruit. Bake for 30 minutes until rhubarb is tender and the topping is browned. Serve warm with a dollop of whipped cream (optional).

Tangy Rhubarb Salsa

2 cups thinly sliced rhubarb

1 small red onion, coarsely chopped

1 large green bell pepper, seeded and coarsely chopped

1 large red bell pepper, seeded and coarsely chopped

1 large yellow bell pepper, seeded and coarsely chopped

1 jalapeno pepper, seeded and coarsely chopped – or to taste

1/2 cup chopped fresh cilantro

3 roma (plum) tomatoes, finely diced

2 teaspoons brown sugar

5 tablespoons Key lime juice

2 teaspoons coarse salt

1 pinch garlic powder, or to taste

Ground black pepper to taste

Stir rhubarb into a large pot of boiling water and cook for 10 seconds. Quickly drain rhubarb and rinse with cold water until cool; transfer rhubarb to a large bowl.

Place red onion, green, red, and yellow bell peppers, jalapeno pepper, and cilantro into a food processor and pulse 3 or 4 times to finely chop; transfer pepper mixture to bowl with rhubarb. Stir in roma tomatoes. Dissolve brown sugar in Key lime juice in a bowl; lightly stir lime juice mixture into rhubarb mixture. Sprinkle salsa with salt, garlic powder, and black pepper and stir salsa again. Refrigerate at least 3 hours to blend flavors.
