Does anyone have some tried and true rhuharb recipes they would be willing to share? TIA!

Rhubarb strawberry muffins. I have made them 5 times so far this spring.

1 1/2 c. flour, 1/2 c. sugar, 2 1/2 tsp. baking powder, 3/4 tsp. salt. Mix together.

1 egg, 3/4 c. milk, 1/3 c. vegetable oil,. Mix together & add to the dry ingredients.

fold in 3/4 cup diced fresh rhubarb & 6 small strawberries also diced.

Fill muffin papers 3/4 full & bake at 350 degrees for 20-25 minutes. Enjoy.

Rhubarb Fluffy Pie. I have made this many times too.

4 cups chopped rhubarb, 1 c. water, 4 serving pkg sugar-free strawberry jello, 4 serving pkg sugar-free cook & serve vanilla pudding mix.

Combine the above ingredients in saucepan. Bring mixture to boil, stirring often. Lower heat & simmer until rhubarb is soft about 10 minutes. Let cool until almost set, then whip with electric mixer.

Fold in 1 1/2 cups cool whip.

Pour into graham cracker crust. Enjoy.

Rosy rhubarb cake, 9" x 13" pan, bake 350 degrees 50-55 minutes.

1 Duncan Hines yellow cake mix. Prepare per instructions on cake box. Pour cake mix into pan.

3 cups rhubarb cut up finely. Sprinkle rhubarb over the cake mix. Sprinkle 1 1/2 cups sugar over rhubarb.

1 1/2 cups whipping cream. Pour cream over it all. Bake 350 degrees 50-55 minutes.

Let stand 15 minutes. Turn upside down on tray. Enjoy.

If you want a nice sauce for any dessert, it doesn't get much easier or faster than this:

1)Toss 2 cups of sliced rhubarb and 1/2 cup sugar in a 1 qt bowl;

2)Cover loosely and microwave 5 minutes;

3)Puree in a food processor or blender w/ 3 tbsp. of orange juice and 1 tsp lemon juice (fresh preferred).

My rhubarb is just coming in. I have picked enough to make two recipes from another post. If I could find that post, I would put it here, but right now I cannot find it. I think that was a thread put together by people who seem to get their rhubarb in the winter.

I need to wait for mine to get thicker. The stalks are no bigger around than a pencil. It takes too many stalks when they are that thin. I do get impatient for it.

I have been looking for a recipe I lost. It was a cake with a custard like top with rhubard. Can't remember the name.

btw-in college the cafeteria asked for suggestions. Mine was rhubarb pie. They served strawberry rhubarb pie so I never ate it. I hate cooked strawberry.
