I enjoy the FN show with Sandra Lee. I like the way she always has a round two recipe after she cooks her main dish. I guess I've done similar things in the past, but lately I've been more mindful of it.
Tonight I had one pound of ground beef. I made two 1/4 lb. burgers for us and with the other half of the meat I created a baked dish of rigatoni and spinach with a creamy sauce, topped with shredded Swiss cheese. I'll bake it Monday night.
What's one of your favorite Round One/Round Two combinations to cook?

I sometimes do the same thing, HC. For instance, I've taken the extra half pound of ground beef in your example and made a small batch of chili, or in the winter a small shepherd's pie. There's only DH and I so we don't need to feed a crowd. DH likes leftovers, but I'm not a big fan. I'm still learning how to reduce the volume on what I've cooked to reduce the leftovers. The exception would be soups in the winter. Can't make homemade soup in a small batch!
Left over grilled chicken becomes the next day's 'big salad' with grilled chicken topper, or pesto chicken salad in a pita.
BTW, Ms. Sandra Lee is now the de facto "First Lady" of New York - she and our Governor are significant others.

I do this frequently, as it is just DH and I. I still cook too much, but sometimes cook extra for the next day, so I don't have to cook after work. this weekend I grilled chicken breast, and then used 3 extra breasts and made the base for chicken enchilada with sauce mushroom soup, salsa and will put it all together with tortillas this week for a quick meal. I also make extra salad one day so I can have it made for the next day. Love doing that as we love our salads.

I read a bio about Sandra Lee recently. She's had a difficult life. I'm glad she's in a good place now. I enjoy her show and Melissa d"Arabian's, as well. They both cook straightforward recipes without all the made-up reality show drama that is popular on FN right now.

I get a turkey ham--Fit & Active--from Aldi. I sort of ""spiral cut"" it and make a glaze and bake it in foil. So good! Then for round two I make a spinach/turkey ham/cheese quiche from the leftovers and my whole family loves it. Also my husband makes omelets out of it.
