No kidding!  I was planning on going through every recipe posted that included peas or beets and notate how I loathe those two things...but then I thought....WHO CARES WHAT I THINK!

 

Just becuz we can hide behind a 'user' name...we think we can say anything we want.  After all, IT'S MY OPINION and I'm entitled to it!  Oh Boy ...would my mom have a comeback for that!

 

It is unkind and totally not necessary to pick apart the health value of a recipe.  Not really low carb, not very healthy with that cheese..THANK YOU...SUSH UP AND GO AWAY!

As a matter of fact,  made it last night!  It was really good!  I just posted a thank you to LitBitt this morning.

 

A long, long simmer to get your meat tender (of course if either one of us got a Pressure cooker....we could have shortened that!  LOL)

 

I loved the Mandarin Oranges and wish I had more to put in!!  I am a fan of water chestnuts cuz I love crunch!  I served it over Unc Ben rice from the pouch (because I need to continually prove to DH that I didn't need that rice cooker!)

I see recipes all the time with ingredients (mushrooms) that I don't like. It's ME - not the recipe!!!!

 

Unless it is a recipe totally about mushrooms, I just leave them out - NO COMMENT NECESSARY!!!!!!!!!

 

DD doesn't like salty things, plus for health reasons. So I watch the amount of salt in a recipe. 

 

I think you hit the nail on the head though. Would they say some of those same things to someones face???

 

I ask DD ALL THE TIME about recipes I make. She says "it was good". Then I say: "would you want me to make it again?". Sometimes I get a "well, maybe not - but it was good".

 

Then I know it really wasn't all that great & she is just being kind LOL!!!

Oh, I didn't see your comment when I looked earlier.

 

I want to try that soon, I have some small, beef cubes in the freezer to use up.

 

Will I NEVER get to the bottom &/or back of that dang freezer LOL?!!

Actually, DD won't touch anything that has them in it!  Apparently, in her opinion, they contaminate!  LOL

Roasted Portobello Mushroom with Poached Egg in a Creamy Mushroom Sauce

Prep Time: 10 minutes Cook Time: 50 minutes Total Time: 1 hour Servings: 2

 

Grilled portobello mushrooms topped with steamed spinach, a poached egg and a creamy mushroom sauce.

 

ingredients

  • 2 tablespoons oil
  • 4 small portobello mushrooms, stems removed
  • salt and pepper to taste
  • 1 ounce dried porcini mushrooms
  • 1/2 cup hot water
  • 1 tablespoon butter
  • 1 shallot, finely diced
  • 1 clove garlic, chopped
  • 1/2 teaspoon thyme, chopped
  • salt and pepper to taste
  • 1/2 cup cream
  • 1/2 cup parmigiano reggiano (parmesan), grated
  • 10 ounces spinach, steamed and squeezed to drain
  • 4 eggs
  1. Soak the dried porcini mushrooms in the hot water for 20 minutes.
  2. Brush the portobello mushrooms with the oil, season with salt and pepper, bake in a preheated 400F/200C oven until tender, about 10-30 minutes, with the gill side up and set them aside to cool. (Note: Roasting time can vary greatly depending on how thick your mushrooms are.)
  3. Drain the mushrooms and chop them reserving the water.
  4. Melt the butter in a pan over medium heat.
  5. Add the porcini mushrooms, shallots, garlic, thyme, salt and pepper and saute for 2 minutes.
  6. Add the reserved water and simmer at medium-high until reduced by half, about 3-5 minutes.
  7. Add the cream and parmigiano reggiano and simmer until it thickens, about 2-4 minutes.
  8. Bring a large pot of water to a boil and reduce the heat to medium.
  9. Crack an egg into a bowl, swirl the water in the pot and pour the egg from the bowl into the water and repeat for another egg.
  10. Let the eggs cook until the whites are set but the yolks are not, about 2-3 minutes and fish them out.
  11. Divide the mushrooms between two plates, top with the spinach, the poached eggs and then pour on the mushroom sauce.

That's too funny!  That's how DH and I gauge the recipe!  Good?  Repeat?

 

He has actually given me a few  "Don't lose this recipe!"

 

He knows my pile is so extensive it is hard to ever find them again!
