Loaded Smashed Sweet Potato Bites
Prep Time: 10 minutes Total Time: 60 minutes
Servings: 12 appetizers
Ingredients:
2 strips thick bacon
3 large sweet potatoes, cut into quarters
1/4 cup olive oil
Salt and pepper
1/2 cup sour cream
4 ounces cheddar cheese, grated
Fresh chives
Directions:
Cook bacon until crispy, either in a skillet or baked in the oven. Once the bacon is crispy, let cool and chop into bits for topping. Set aside.
Preheat oven to 350ÂşF.
Cut off the ends of the sweet potatoes, then cut them into quarters. Pour olive oil on a baking sheet and rub potatoes on both sides to coat. Sprinkle potatoes with salt and pepper.
Bake potato pieces for 25-30 minutes until they are fork tender.
Then let cool briefly until you can handle them.
Use a small plate to smash each potato down a bit.
Return smashed potatoes to baking sheet. Bake smashed potatoes a second time for 10 minutes to crisp them up a bit.
Remove potatoes from oven.
Top with sour cream, shredded cheese, crispy bacon bits, and fresh chives.
Chili's notes:
Those of you that like marshmallows could top these sweet potato bites with a couple mini marshmallows instead of the sour cream, cheese, bacon & chives.

Chili, these look great but I have a quick question . . . do you peel these before you pop them in the oven (I'm thinking maybe no but then when you mash them for the second time I was thinking maybe yes) . . . ![]()

No, they are kind of like a loaded potato skin only with sweet potatoes. And in bite size form.
You really just mush them down a little bit.
So, I would scrub up the skins good & then they can be eaten if you like them. If not just eat the "guts" LOL!

Well, maybe you mush or smash them a little to turn them from a piece of cooked sweet potato to fluffier sweet potatoes so to speak.
Does that make sense???

I guess since you are in the middle of the state...you could go either way. Join the throng of sad Bills fans...or switch to one of the other two football teams with 'New York' in their name...even though they are phoney NY teams and play in Jersey!! LOL

Believe it or not, I have never had a sweet potato with marshmallows (wasn't allowed in the house) so I think I'll do half of the potato with Chili's recipe and the other half with the marshmallows . . . hmmmm, maybe I need to do this NOW . . . . ![]()

Respect, the recipe didn't call for marshmallows but I don't know why it wouldn't work.
