I don't know if I've mentioned this couple before at my gym, but they are there every morning that I'm there.  They have to be at least in their 80s, but it's hard to tell.  They walk in together holding hands with their Dunkin Donuts coffee, they work out on the weight machines and cardio machines, and then they leave together holding hands.


They are adorable.

Just to keep everybody up to speed, we just countered the first offer.  It's all cash and we would close on the 20th of February but allow me to stay in the house for an additional 60 days for free so fingers crossed that this gets wrapped up quickly . . . Smiley Happy

We had a request to fun a baseball team.  I hope we get enough interest and do that because it will deplete our funds so that we have to cut out some events this year to cover the cost.  From what I looked at online, it's not cheap, plus we have to buy them jerseys.

I think it's a testament to your leadership that these folks are taking initiative like this and I hope the baseball team works out.  Many years ago we had one at my company and everyone would come out either to play or to cheer the team on (or maybe it was the pizza and beer afterward) . . . good on you my friend!

 

And thank you for sharing your story about that couple, it's nice to see someone gets it exactly right sometimes . . . Heart

Oh thanks @ChiliPepper, it was a nice surprise and relief that it got some buzz so quickly.  I'll be chatting with the realtor on Sunday to figure out next steps.  I just know I am not going to pushed into anything unless I like the numbers, I'm not going to let that happen to me again.

 

I saw that maybe you guys are getting bad weather again but it sounds like no snow right now?

Oh, VaBelle, you brought back a wonderful memory.  I knew your couple's twins -- they were from Charleston, WV.  They had been sweethearts since elementary school and they still looked at one another as if each of them came right off the top of the Christmas tree.  They wrote to me once that they were practicing their dancing in their living room (in their tap shoes), and then they "would roll the rug back over the spot to cover up the damage."  Just seeing them together would give you hope for the whole human race.  Thanks for bringing a big soppy grin to my face on this cold morning.

Speaking of romance, I think I am going to have a long and loving relationship with those little pearl onions.  I finally remembered to look for them at the grocery store.  I found a ten ounce mesh bag of the fresh ones first, then went to look for the frozen ones.  I decided to experiment with the fresh ones first -- I figured I could always throw them away without much loss if they were too much of a pain to peel (hmmmm, new code, PTP ????).

 

There was a recipe on the bag for Roasted Balsamic Onions.  It said to put them in boiling water for 30 seconds - CLICK.  Peeling them really wasn't bad at all, although I can see it would be tedious to do enough for a family.  I popped one in my mouth while I was peeling and thought they really didn't need any more cooking to be to my taste.  I had some whipping cream in the fridge, so I just added some salt and a little bit of cornstarch to thicken instead of making a white sauce, and heated all together.

 

To quote RR -- YUMM-O!  Mashed potatoes with those sweet creamy onions spooned on top........ (Alone they weren't half bad as Onion S-O-U-P either.)

 

Whatya think -- should I be Inclusive and post a recipe for Whipping Cream Onions in the Forum to entice the Food Police ???????

Teriyaki Chicken Noodle Bowls

Yield: 4 servings


Prep Time:
1 hour Cook Time: 10 minutes   Total Time: 1 hour 10 minutes


A quick fix dinner made in less than 30 min. And the teriyaki sauce is completely homemade and way better than store-bought!

  • 2 (5.6-ounce) packages refrigerated Yaki-Soba, seasoning sauce packets discarded*
  • 1 tablespoon cornstarch
  • 1/3 cup reduced sodium soy sauce
  • 1/4 cup brown sugar, packed
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons honey
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch chunks
  • 1 tablespoon olive oil
  • 1 teaspoon sesame seeds
  • 1 green onion, thinly sliced
  1. In a large pot of boiling water, add Yaki-Soba until loosened, about 1-2 minutes; drain well.
  2. In a small bowl, whisk together cornstarch and 1/4 cup water; set aside.
  3. In a small saucepan over medium heat, add soy sauce, brown sugar, garlic, ginger, honey and 1 cup water; bring to a simmer. Stir in cornstarch mixture until thickened enough to coat the back of a spoon, about 2 minutes; let cool to room temperature. Reserve 1/4 cup and set aside.
  4. In a gallon size Ziploc bag or large bowl, combine soy sauce mixture and chicken; marinate for at least 30 minutes to overnight, turning the bag occasionally. Drain the chicken from the marinade.
  5. Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden brown and cooked through, about 3-4 minutes; set aside.
  6. Stir in Yaki-Soba and 1/4 cup reserved soy sauce mixture until well combined, about 2 minutes.
  7. Serve immediately, garnished with sesame seeds and green onion, if desired.

*Yaki-Soba is ramen-style noodles and can be found in the refrigerated aisle of your local grocery store.
