Good morning Kitchenettes, hope everyone is doing well and had a great weekend!  Heart

 

As usual, nothing much happening here.  Just unloaded some groceries and then proceeded to break several nails trying to get into a battery box for some Christmas lights . . . ugh, they used to be so easy to get into! . . . Smiley Frustrated

 

Sunny but cold here so in other words I have no complaints which let's face it is highly unusual . . . hope you all are doing well my friends . . . Heart

I have had several Christmas decor go dark already in less than a month!

 

Are they making batteries cheap these days or something?

 

Why are they the ones that require a tall step stool to get at besides??

 

All of the batteries on the low things are going strong!   LOL

 

 

Anyone making a new Christmas dish this year?

 

I am stumped on the startch to go w/ our Prime Rib.

 

Sick of M&C ...and I have developed a recent fear of slicing potatoes....

I am making something called Delmonico Potatoes tomorrow.  I'll post the recipe if it's a keeper!

How about this for Christmas dinner?  I would use Smoked Paprika!

And maybe brush with butter instead of oil?

Paprika Smashed Potatoes

Prep Time: 5 mins
Cook Time: 40 mins
Total Time: 45 mins
Course: Side Dish
Cuisine: American
These smashed potatoes, seasoned with paprika, garlic powder, and black pepper, are tender on the inside and crisp on the outside – a delicious side dish for any meal.
 
Ingredients
  • 16 ounces baby gold potatoes (about 12 - 16 depending on the size)
  • kosher salt
  • 3/4 teaspoon sweet paprika
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon garlic powder
  • 1 teaspoon extra virgin olive oil
  • Reynolds wrap heavy duty foil
  • chopped parsley (for garnish)
Instructions
  • Place the potatoes in a medium pot and cover with cold water, add 1 teaspoon kosher salt. Bring to a boil and cook until a knife easily pierces to the center of each potato, about 18 - 20 minutes. Remove from water and dry, place on a clean work surface and gently press using the bottom of a glass to smash the potato.
  • Preheat the oven to 425F. Line a sheet pan with foil.
  • In a small bowl combine paprika, 1/2 teaspoon salt, black pepper and garlic powder. Place potatoes in a single layer on the prepared sheet pan. Lightly brush potatoes with oil and sprinkle both sides of each potato with spice mix.
  • Bake 20 minutes, turning halfway until crisp and golden. Garnish with parsley.
Serving: 4small potatoes, Calories: 135kcal, Carbohydrates: 20.5g, Protein: 2.5g, Fat: 5g, Saturated Fat: 0.5g, Sodium: 7.5mg, Fiber: 2.5g, Sugar: 1g

She and her family are okay.  The one at the Amazon warehouse was not too far from them.  Very scarey....one family member lost power, but while the storms were SO close, they are all okay.

@RespectLife, Thanks. I'm glad everyone is OK. I have been so busy trying to get Christmas gifts ready and moving details. I close on my townhouse on Monday.

 

The big house listing was activated at midnight one day last week and sold the next morning before lunch. I knew it would be quick but did not expect that quick. Still packing and shredding stuff in the office that is no longer needed. etc. My helpers were here today and brought me some nice homemade cookies and all sorts of good things. I have been getting into the tins all day sampling. LOL.Woman Tongue
