Good morning Kitchenettes!!! Happy, happy, dark, drizzly, damp, depressing Tuesday!!!!

 

I agree, another SOUP day. Anyone got any suggestions??? Not that our beloved Potsticker Soup isn't perfect but I think it's damp & cool enough for a heartier soup.

 

Ideas?????

This one is speaking to me today!!!!  The calories and fat are YIKES a bit...but it does look good!

A nice alternative to the fresh chopped basil is basil pesto, whether homemade or store bought and store bought is a nice pantry friendly way to go when fresh basil is not available.

Creamy Parmesan Tomato and Spinach Tortellini Soup

Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Servings: 4

  • 2 tablespoons butter
  • 1 onion, diced
  • 2 cloves garlic, chopped
  • red pepper flakes to taste (optional)
  • 1/4 cup flour (rice flour for gluten free)
  • 3 cups vegetable broth or chicken broth
  • 1 (28 ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • 8 ounces cheese tortellini (gluten free for gluten free)
  • 1/2 cup parmigiano reggiano (parmesan), grated
  • 10 ounces spinach, coarsely chopped
  • 1/2 cup heavy/whipping cream or Greek yogurt
  • salt and pepper to taste
  • 1/4 cup basil, chopped (optional)
  1. Melt the butter in a pan over medium heat, add the onion and cook until tender, about 5-7 minutes.
  2. Add the garlic and red pepper flakes and cook until fragrant, about a minute.
  3. Add the flour and cook for another minute.
  4. Add the broth, tomatoes, tomato paste and tortellini, bring to a boil, reduce the heat and simmer until the tortellini is tender, about 10 minutes.
  5. Add the parmesan, let it melt, add the spinach, let it wilt, add the cream, season with salt and pepper to taste, remove from heat before adding the basil.


Option: Puree some or all of the diced tomatoes. (I like to puree half of them.)
Option: Add 2 cups of cooked and shredded chicken or 8 ounces of cooked Italian sausage to make it even heartier.
Option: Replace the fresh basil with 2 tablespoons basil pesto.

I don't know if this is helpful as it is all about Spring soups and it sounds like you need something a bit more heartier but thought I would post it just in case:

LOL  Well, I'm sorry your Kinds were stale too but glad it wasn't just all in my head!

I had Kind stored in my basement (Corozonas as well) for a long time and they NEVER tasted so stale as the ones I got at Amazon.  Those must have been REALLY old and improperly stored...damp?

 

I had them on AD w/ Amazon and let the second ones come...same stale bars.  Gee, I never thought to return!  DUH!  Just ate them and grumbled.

 

We don't have Costco....I'll have to google to see who else carries Corozona.  I am afraid to try Amazon though for those either.  Maybe Coroz has their own website.

 

I hear ya, I really need to watch where I spend!!

I think I have most or all of the ingredients to make Respect's soup tonight!

 

OMG, did you see the strawberry soup on mtc's link??? LOL, talk about different! That link definitively deserves a thorough look-see when I have a few minutes!

FYI: I got this Nordic Ware pan at Marsahall's the other day. It was on clearance for $ 12.00, which seems cheap to me for Nordic Ware.

 

Funny how a pan can make me so happy LOL!

I LOVE that pan!  I love Nordic Ware!  I paid well over $30+ on Amazon for each of my fancy Nordic bundts...might have been even more.

 

It sounds like a GOOD deal!  Why don't I ever go to those stores!!  Tuesday store, Home goods....easier to just mope at home that I have no one to shop with...and pay 2x the price online somewhere!

 

I need to get over myself and git out there and run some errands!  LOL

 

 

Hey Chili...is it a loaf pan?  Or a full cake pan?  It is so cool!

 

I love when you make things in those fancy pants...then just dust some Powd sugar...voila!  Pretty dessert!!

Well, I wouldn't go either but DD wanted to stop there before we went to Aldi's. She likes sports apparel (Nike etc.) & if you can find it there, it is half of what the sports type stores charge. It's always hit or miss there but it is fun to look.

 

Plus, I would waaaaaaaay rather go to one store than the Mall!!!!!

 

It's a loaf pan, so pretty! I thought of all of you because you like lemon recipes so much.

 

I want to make banana bread though, got a hankering for that!

Okay....I got all the stuff last night to make David's Eggs Benedict with Green Goober Cream tonight.

 

I think I just might like the green mush with yogurt, lime, tabassco, garlic etc.

 

I have a nail salon appt after work.  If my nails aren't too wet....I am giving it a whirl tonight,

 

I didn't get turkey bacon...BLECH...oops, I mean It is not to my liking.

 

I have crumbled bacon in the frig to use up so I will just add some.

 

Isn't that funny.  DH was a cook at Perkins for 22 years and NEVER put vinegar in the water to poach his eggs.  I will have to pick his brain on that....He is my egg man.
