Was an excellent teacher!  We discovered part of the problem is that I have the first version of Word EVER invented (okay maybe not the first..but 2007)...and my computer system Windows XP is also older than me!  LOL

 

It wouldn't let me do a lot of current things...but in a limited capacity...I can post a pic!!

Good afternoon everyone

 

It is indeed a happy Monday because I don't have to go to work today Smiley Very Happy

 

I had a nice day at the casino, it was a beautiful drive and my burger at Bobby's Burger Palace his the spot.

 

Speaking of neighbors and UGH!  When I got home last night, someone was in my parking spot.  So I just parked in my second spot and went inside.  I knew it was my new next door neighbors as it sounded like they were having a party of some sort.  At one point they realized I as home and started knocking on my door, which I ignored.  Eventually the car moved and I moved my car to my regular spot.  My neighbor came out a little sheepish and said he didn't think I had 2 cars so it wouldn't be a problem.  I tried to explain (again unsuccessfully) that we have reserved parking and that towing starts a 7, but we got interrupted.  At some point, I will explain to him again how parking works.  It's not even a big deal that he parked in my spot.  What the big deal is is whoever parks there is going to get towed by the towing company as we have automatic towing.  The last renters blamed me for their car being towed 3 nights in a row.  The fact that YOUR landlord refuses to educate your on our rules, is not my problem.

 

It apparently annoyed me more than I thought because I dreamed at next door neighbor was a first date with an online date but he had a different name.  LOL and OY!

 

Today I went to cycle class with my favorite instructor.  I got the hoses out in my rose garden and did a first round of bug killer and fertilizer.  Because of all the frosty and near frosty nights, no bugs out there yet.  

 

I am going to Walmart later to see about getting hanging baskets for the front yard since the frost should have passed by now. It is going to be in the 80s today, so I will be digging out the shorts later.

 

I need to get my oil changed tonight.  As you all recall, on my last vacation I also got my oil changed and about $2000 worth of work along with it.  I hope I get out of there with just an oil change this time.

 

I also called the painter who painted my house during my last vacation to fix the 2 spots that were damaged in the blizzard.

 

I feel like I'm reliving my last vacation.

 

I never made it to the olive oil store this weekend because there was a festival on Saturday.  I will go today before my oil change.

That's cuz Chili and I have decided we could 'suffer' (tee Hee) through avocado if we had to.  We don't hate it...just don't love it.  Same with the sprouts!

 

I added peas to the list of things I could suffer through since they can be swallowed whole like a pill with a glass of milk or water.

 

So the others were on @ChiliPepper list of...

 

AIN'T NO WAY....NOPE, NADA, FERGIT ABOUT IT...

 

YOU CAN'T MAKE ME EAT THAT...I'LL SIT AT THIS TABLE FOR THE REST OF MY LIFE.....

 

I'D RATHER EAT DIRT AND WORMS....

@VaBelle35 what phenomenal weather you are having for your vacation, yay on that!

 

I am lucky that I have my own garage/driveway so parking is never an issue for me.  Throughout different holiday's I always let my neighbors use my driveway and they couldn't be nicer or more thoughtful to make sure they are not in my way.

 

I hope after you clear out the odds and ends that you are covering in the first couple of days of your vacation are finished quickly and that the rest of your vacation can be spent doing what you want to do . . . you know, like a vacation . . . Smiley Happy

I was on the 3 ingredient link that @momtochloe posted and I found my way to this delicious sounding recipe.

 

I posted it for Mrs. G,  hopefully it is a lower carb one she can use.  I am not very good at nutritional values but the info at the end made it seem low???

 

Anyways...this sounds good!!  And LOOKS good, thanks to my new knowledge of posting pics!  tee hee!!

 

Pork Medallions with Dijon-Mushroom Sauce

  • Prep Time 30 min                     Total Time 30 min                     Servings 2

A creamy sauce adds an elegant touch to a dinner ready in just 30 minutes.

Ingredients

5     teaspoons butter

1     shallot, finely chopped (2 tablespoons)

1     jar (4.5 oz) Green Giant™ sliced mushrooms, drained

1     teaspoon vegetable oil

1     pork tenderloin (1/2 to 3/4 lb), cut into 8 (3/4-inch-thick) slices

1/8  teaspoon salt

1/8  teaspoon pepper

1     tablespoon cognac or apple juice

1     tablespoon Dijon mustard

1/2  cup whipping cream

Fresh thyme sprigs or basil leaves, if desired

Directions

  • In 8-inch skillet, melt 2 teaspoons of the butter over medium heat. Add shallot and mushrooms; cook and stir 1 minute or until tender. Remove from skillet.
  • To same skillet, add remaining 3 teaspoons butter and the oil. Add pork; cook 8 to 10 minutes, turning slices halfway through cooking, until browned and no longer pink in center. Sprinkle with salt and pepper. Remove from skillet; cover to keep warm.
  • Gradually add cognac to same skillet; stir in mustard and cream. Heat to boiling; boil 1 to 2 minutes, stirring constantly, until slightly thickened. Add mushroom mixture; cook 1 minute or until thoroughly heated. Serve sauce over pork slices; garnish with thyme.

I know @RespectLife doesn't that recipe look delicious?  I saved the entire thread in my Recipe folder as there was so much to choose from that looked easy and delicious.  I really enjoy both Tablespoon and Delish sites . . . Smiley Happy
