I purchased a jar of Kraft Pimento Spread at the grocery store yesterday. (Guess it's no longer a top-seller as they had to search for it and when found, I got the only jar.) It was $3.49 for a 5oz jar!![]()
But, I'm hooked on this spread on crackers topped with a slice of cucumber (which are 99cents each!
) I tend to go through "food modes" eating the same thing each morning. And my furbaby has developed a new-found liking for this also.
So, while I can't grow cukes I can at least learn to make pimento spread which I find ridiculously over-priced
. Can anyone suggest a recipe - a small recipe - for making this? I don't want a ton 'cause not sure if it would freeze well.

i could be wrong here, but, isn't it just like jarred pimentos, mashed into cream cheese?

I make this all the time and it is really simple. I buy Cracker Barrel extra sharp cheddar cheese and grate it up. Then I add a jar of pimentos and a little salt. Stir in a couple spoons of real Mayonnaise. It is delicious!

Might want to check The Pioneer Woman, I believe she just made this on a show airing within the last month, I thought, does anyone eat this anymore?....guess it's real popular in the South.
Haven't found a recipe from her that I didn't like.

That's what I thought, plus spices, and that's why I was shocked at the price!

I make mine with a package of shredded cheese, jar of diced pimentos, and mayo added until I get right texture. That’s all I use.

You're right, @Mistreatedbycs, it's not popular up north - at least in my neck of the woods. I had to describe to three store people what it was. When I mentioned it being stuffed in celery sticks when growing up, they finally realized what it was. Then had to search the store!
It's really tasty so don't know why it's not that popular around here!

Never knew it was so simple! Thank you so much and could you also give me a rough idea as to whether I can make a batch and freeze it or how long it lasts in the fridge?

I think it only comes out in the stores around Thankgiving and Christmas that's the only time I can find it.
