Yeah, I know, put it in boiling water.....Then what do you do with it?

 

I put it in a jarred sauce for a quick lunch!

 

Any other suggestions?

Pesto is wonderful on tortellini, I also had a cold salad with tortellini in it. I also made it with Alfredo and peas. 😋

Google:  tortellini recipes. Or use Search the same way on YouTube. Then you’ll have enough choices for a different tortellini meal every night for 3 years.  It’s pasta; you can do anything with it that you enjoy.

I throw it in soup or in a salad to jazz them up a little. I love Rana's prosciutto and cheese and Barilla's cheese and spinach tortellini.

Tortellini Caesar Salad
(Source: slightly adapted from Quick Cooking)

1 (9-14 oz.) pkg. frozen cheese tortellini
½ cup mayonnaise (I use low fat mayonnaise)
1/4 cup milk (I use low fat milk)
1/4 cup freshly grated Parmesan cheese (or you can use the shredded Parmesan in the bag found in the dairy case-don't use the one in the can though-it's way too dry and salty)
2 Tbsp. lemon juice
1-2 cloves garlic, finely minced
Freshly ground black pepper to taste
8 cups torn Romaine lettuce*
1/3 cup freshly grated Parmesan cheese**
1 cup seasoned croutons
Halved grape or cherry tomatoes (optional-I use regular cut-up tomatoes when I don't have grape or cherry tomatoes-like in the salad in the picture)

 

Cook tortellini according to package directions; drain and rinse with cold water.

 

For dressing, in a small bowl, whisk together mayonnaise, milk, 1/4 cups Parmesan, lemon juice, garlic and pepper.

 

Place tortellini in a large salad bowl. Add Romaine lettuce and 1/3 cups Parmesan cheese.

 

Just before serving, drizzle with dressing and toss to coat. Top with croutons and tomatoes, if desired. 10 servings.

 

*You can mix different kinds of lettuce if you choose. I usually serve the dressing on the side when we have it here at home so that we can enjoy the salad for a few days without it getting soggy.

 

**I sprinkle on the cheese as I serve it....I find it easier to control that way.

 

NOTE: Add some cooked sliced or cubed chicken to this and you've got yourself a main dish salad...great during the summer on those I don't want to heat up the kitchen nights.

1 lb sweet Italian sausage, out of casings

1 cup chopped onion

2 tsp minced garlic

6 cups beef broth

1/2 cup red wine

2 15-oz cans petite-diced tomatoes, drained

1 cup thin-sliced carrots

1/2 tbsp chopped basil 

1/2 tsp dried oregano

1 8-oz can tomato sauce

1 1/2 cups sliced zucchini

8 oz fresh tortellini

3 tbsp chopped parsley

 

Brown sausage in large Dutch oven.  Drain and reserve for later, leaving 1 tbsp fat in pot.  Saute onions and garlic in fat.  Stir in broth, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage.  Bring to a boil, then reduced heat to simmer for 1/2 hour.

 

Skim fat from surface of soup, then stir in zucchini and parsley.  Simmer covered for 1/2 hour, adding tortellini after 20 minutes. I like a little grated Parmesan on top when serving.
