Meatloaf
1/12 lbs. Ground beef
1/2 cup ketchup
1/3 cup V-8 juice
Salt and pepper to taste
1/8 tsp. Red pepper( cayenne for taste not hot at all)
2 eggs,beaten
1/4 cup minced onion
3/4 cup Italian bread crumbs
2tsp. Prepared mustard
Topping
1/4 cup ketchup
1/2 tsp. prepared mustard
2 tsp. Brown sugar
Mix meatloaf ingredients together &put in a 9X5 loaf pan.
Mix topping ingredients together & spread over meatloaf.
Bake in preheated 350* oven for 45 min. or until meat is done.

These are very well received. I make them and place little bowls around and they always come with empty bowls for refills. I use almonds whole, and pecans. I think walnuts would be good too.
Rosemary Nuts
1 tablespoon butter
1 teaspoon dried crumbled rosemary
½ teaspoon salt
¼ teaspoon cayenne
1 cup nuts
Melt butter with herbs and salt.
Toss with nuts.
Bake 10 minutes @350.

Philly Cheesesteak Sliders
2 green peppers, sliced
1 sweet ONION, sliced
1 tablespoon OLIVE OIL
2 pkgs. (12 oz each) Hawaiian Sweet Rolls
1 1/2 lbs. sliced deli roast beef
12 slices provolone cheese
1/4 cup butter
1 1/2 teaspoons dried minced ONION
1 1/2 teaspoons Worcestershire Sauce
1 teaspoon garlic powder
Cook green peppers and ONION in OIL over medium-high heat until tender, 8-10 minutes. Without separating rolls, cut each package of rolls in half horizontally; arrange bottom halves in a greased 9x13" baking pan. Layer with roast beef, pepper mixture and cheese; replace top halves of rolls.
Melt butter, dried ONION, Worcestershire Sauce and garlic powder. Drizzle over rolls. Cover and refrigerate 8 hours or overnight.
Preheat oven to 350. Remove rolls from refrigerator 30 minutes before baking. Bake, uncovered, 15 minutes. Cover with foil and continue baking until cheese has melted, about 10 minutes longer.

POUTINE WITH HOMEMADE GRAVY

GRAVY
FRENCH FRIES & CHEESE
FROZEN FRIES
table salt
2 cups white cheddar cheese curds room temp.
MAKE GRAVY
COOK FRENCH FRIES
ASSEMBLE
ADD CHEESE CURDS FIRST, THEN GRAVY
**my notes: Being a border area, we have had Poutine a million ways to Sunday.
What I like best about this recipe is her Home Made Gravy.
The majority of the time, we go off the grid a bit w/ our Poutine and use chopped small potatoes instead.
It works much better when serving guests as you can keep it warm in the oven.
FF have a very short serving time, IMHO, whereas using pots makes this a 'Make Ahead Dish'
Traditional, is FF...but many restaurants have stepped away from our Canadian friends and used different types of potato.

QUICK Crescent Taco Pie
1 lb. Ground Beef
1 pkg. taco seasoning mix
1/2 cup water
1/2 cup chunky salsa
1 can refrigerated crescent rolls
1 1/2 cups crushed corn chips, divided
1 (8 oz) carton sour cream
1 cup shredded cheddar cheese (or more)
shredded lettuce
sliced black olives
diced tomatoes
Brown meat in skillet and drain. Add seasoning mix, water, and salsa; simmer for 5 minutes. Spread crescent roll dough in 10" pie plate to form crust; press edges together at seams. Sprinkle 1 cup corn chips on crust bottom; keep remaining 1/2 cup. Spoon in meat mixture. Spread sour cream over meat. Cover with shredded cheese; sprinkle on remaining 1/2 cup corn chips. Bake at 375 for 20 minutes until crust is golden. Remove from oven and top with lettuce, olives and tomatoes before serving.
* May want to bake on cookie sheet in case it bubbles over.

Roasted Garlic Cheese Toasts
Ingredients
3 heads of garlic, top 3/4 inch of each cut off and discarded
1/4 cup olive oil
3/4 cup grated Parmesan cheese
1/4 cup cream cheese, room temperature
2 tablespoons mayonnaise
1 teaspoon minced fresh thyme
French-bread baguette, cut on diagonal into 1/2-inch-thick slices
Preparation
Preheat oven to 350°F. Place garlic, cut side up, in small glass baking dish; pour oil over each head and sprinkle with salt. Cover; bake until garlic is tender, about 1 hour. Uncover; let cool 15 minutes. Squeeze garlic from each clove into medium bowl and mash. Mix in Parmesan, cream cheese, mayonnaise, and thyme. Season to taste with salt and pepper.
DO AHEAD Can be made one day ahead; cover and refrigerate. Allow to soften slightly at room temperature before continuing.
Preheat oven temperature to 425°F. Spread garlic mixture on bread slices; arrange on 2 baking sheets. Bake until toasts are beginning to brown at edges, about 12 minutes.

Several ingredients but not difficult and good...makes a lot so it is good at potluck or large gathering.
SOUTHWESTERN SPIRAL PASTA SALAD
1/2 cup fresh lime juice
1/4 cup olive oil
2 teaspoons ground cumin
2 garlic cloves, minced
1 tablespoon SALSA
1 tablespoon white wine vinegar
3/4 teaspoon cayenne pepper, optional
1/2 teaspoon SALT
1 pkg. (16 oz) uncooked SPIRAL or Cavatappi pasta*
1 1/2 cups fresh or frozen whole kernel corn, thawed
1 can black beans, rinsed and drained
1 cup cherry tomatoes, halved
2 small cans sliced ripe olives, drained
1 green pepper, finely chopped
1 sweet red pepper, finely chopped
1 small red onion, finely chopped
1/2 cup coarsely chopped fresh cilantro, divided
1 ripe avocado, peeled and sliced
Whisk the first 8 ingredients until blended in small bowl; set aside. Cook pasta, rinse and drain. In large bowl mix pasta, corn, beans, tomatoes, olives, peppers, onion and 1/4 cup cilantro. Pour dressing over salad; toss to coat. Refrigerate until serving. Just before serving, top with avocado and remaining cilantro.
* I think whole box of pasta is too much....going to use
about 3/4 next time I make it.
