Feta-Spinach Casserole

Gluten free, low carb, and vegetarian, making it a great side dish or main if you need to accommodate special diets.


Ingredients:

  • 3 large eggs , beaten
  • 2 cups cottage cheese
  • 10 ounce package frozen chopped spinach , thawed and very well drained
  • 1/3 cup crumbled feta
  • 1/3 cup diced sweet onion
  • 1/4 cup melted butter
  • 2 tablespoons freshly grated Parmesan
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • dash of nutmeg

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease a 1 1/2  quart casserole dish and set aside.
  3. Combine all the ingredients in a large bowl and then transfer to the greased dish.
  4. Bake, uncovered, for about 40-45 minutes or until the center is nearly set.
  5. Let cool for 5-10 minutes, then cut, serve, and enjoy!  Serves 6.

That's a keeper, for sure!  One of my sons is gluten intolerant and the other and his s/o are vegetarian.  It makes cooking for everyone quite challenging.

Homemade Pumpkin Coffee Creamer

 

  • 1 and 1/2 cups (360ml) heavy cream
  • 2 Tablespoons (30g) pumpkin puree
  • 2 Tablespoons (30ml) pure maple syrup
  • 1/2  1 teaspoon pumpkin pie spice
  • 1 – 2 cinnamon sticks

 

 

  • In small saucepan over medium heat, whisk together heavy cream, pumpkin, maple syrup, and pumpkin pie spice. Add cinnamon sticks and increase heat to medium-high. Bring to boil, whisking occasionally, for 1 minute, then remove from heat and let creamer cool in pan 5 minutes before using in your coffee. Add sugar to your coffee if you take it that way. You can also add whipped cream and a sprinkle of cinnamon too.

Italian Sausage Pizza Soup

Ingredients

  • 1 package (1 pound) Italian turkey sausage links
  • 1 medium onion, chopped
  • 1 medium green pepper, cut into strips
  • 1 medium sweet red or yellow pepper, cut into strips
  • 1 can (15 ounces) cannellini beans, rinsed and drained
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 jar (14 ounces) pizza sauce
  • 2 teaspoons Italian seasoning
  • 2 garlic cloves, minced
  • 2 cans (14-1/2 ounces each) beef broth
  • 1 package (5 ounces) Caesar salad croutons
  • Shredded part-skim mozzarella cheese
  • Remove casings from sausage. In a large skillet over medium-high heat, cook and crumble sausage until no longer pink. Add onion and peppers; cook until crisp-tender. Drain and transfer to a 6-qt. slow cooker.
  • Add next five ingredients; pour in broth. Cook, covered, on low until vegetables are tender, 6-8 hours. Serve with croutons and cheese.

  •   This one tastes like sausage pizza! Stir in your fave pizza toppers.
  •   If your pizza preference runs toward pepperoni instead of sausage, you're in luck. Go ahead and use some pepperoni, but microwave it for about 20 seconds before adding it to the soup; you'll remove a lot of the grease.

Japanese-Style Sesame Green Beans

Ingredients:

1 tablespoon canola oil

1 1/2 teaspoons sesame oil

1 pound fresh green beans, washed

1 tablespoon soy sauce

1 tablespoon toasted sesame seeds

Directions

Warm a large skillet or wok over medium heat.

When the skillet is hot, pour in canola and sesame oils, then place whole green beans into the skillet. Stir the beans to coat with oil.

Cook until the beans are bright green and slightly browned in spots, about 10 minutes.

Remove from heat, and stir in soy sauce; cover, and let sit about 5 minutes. Transfer to a serving platter, and sprinkle with toasted sesame seeds.

 

If I don't have fresh green beans...I use steamers, dry them then use as fresh!  I like beans cooked!

Latte  -- Pumpkin Spice

 

2 cups milk -- 1/2 cup brewed espresso coffee or 3/4 cup strong brewed coffee  -- 2 Tbsp. canned pure pumpkin --

2 Tbsp. sugar -- 2 Tbsp. vanilla exract -- 1/2 tsp. pumpkin pie spice -- Garnish whipped cream and a sprinkle of cinnamon. Combine milk & coffee in a saucepan on low heat whisk in pumpkin, sugar & spice until combined, heat slowly until warmed through. Whisk again before serving.

Top with whipped cream & sprinkle of cinnamon.

serves 2-3
