My dear sweet friend Vicky's fabulous take on green bean casserole:

Vic’s Green Beans

3 cans green beans

2 tbsp. minced onion

1 tbsp butter

1 tbsp flour

1 cup shredded mozzarella cheese

1 cup shredded swiss cheese

½ cup sour cream

Panko crumbs

Butter for dotting over top of panko

Preheat oven to 350, butter a baking dish. In skillet, heat butter, add onion and for a minute. Add flour to make a roux. Cook additional minute to eliminate raw flour taste. Pour over beans and mix in. Mix cheese and sour cream together and stir into beans. Pour into baking dish, top with panko and dot with butter. Bake 30 minutes.
