Does anyone happen to have the instruction/ recipe booklet that you got with the 4qt nesco toaster oven? I am looking for a recipe that uses chicken, tortilla chips, salsa and cheese in it. Don’t remember the name of it. Have looked online but nothing. I have that booklet but it’s in storage right now—-

Baked Salsa Chicken

 
Baked Salsa Chicken recipe made with chicken breasts, taco seasoning, salsa, tortilla chips, and shredded cheddar cheese.

Ingredients

Rub ingredients

  • 1 tablespoon chili powder
  • 1 1/2 teaspoons cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon oregano

Baked salsa chicken ingredients

  • 4 boneless skinless chicken breasts
  • 1 cup salsa
  • 1 cup sour cream
  • 1 cup crushed tortilla chips
  • 2 cups shredded cheddar cheese

Instructions

  • In a small bowl, mix together rub ingredients.
  • Place chicken breasts on a foil lined cookie sheet and rub about 1/2 tablespoon onto both sides of each chicken breast.
  • Use more or less depending on how large your chicken pieces are, just make sure they're coated all the way around.
  • Bake at 400 for 30-40 minutes, or until internal temperature reaches 165 degrees.
  • Remove from oven and top chicken with 1/4 cup salsa, 1/4 cup sour cream, 1/4 cup tortilla chips, and 1/2 cup shredded cheese.
  • Place bake in oven for 10 minutes or until cheese is melted.

I checked my Original Nesco Oven Cookbook Circa 1993 & couldn't find the one you wanted but I found the one I posted.  I still have my 18Qt. Nesco Roast-Air-Oven & use it a lot especially for the holidays.  Hope this helps.  Virginai Olsen was the Nesco Rep. & had a cookbook but it is not available on Amazon right now. She was hurt in an accident & never returned to QVC.  She has sinced pased away!!!  My Grandmom had a Nesco oven back in the 40's & 50's & it was still working up to 30 yrs ago.

If you don't need the recipe right away, Ebay has Nesco cook books from the early 1990's and they are very reasonably priced. 

 

I had the oval 6 quart Nesco. Almost had a fit until I bought it and I probably only used it a couple of times. Finally gave it to Goodwill. It went the way of the pizza stone, the George Foreman large electric grill, ice cream maker and a pressure cooker. So glad I am over this phase of life where I can't resist the urge to buy small kitchen appliances that I don't need and will never use.

The only Nesco recipe I could find with those ingredients is Slow Cooker Buffalo Dip.

I still have my 6qt & 12 qt Nesco with roast air fan on each. 

 

  • 8 oz. cream cheese
  • 4 cups of cooked chicken breast (Shredded)
  • 2/4 cup buffalo sauce
  • 1 cup ranch dressing
  • 1.5 cup cheddar cheese (Shredded)
  1. Place cooked chicken, cream cheese, buffalo sauce, ranch dressing, and 1 cup of shredded cheddar cheese into your slow cooker and stir together.
  2. Place cover on and set to HIGH heat for 1-2 hours. Make sure to stir every 20-30 minutes.
  3. The dip will be ready to serve when the cheese is fully melted and you no longer see chunks of cream cheese.
  4. Sprinkle the remaining shredded cheddar cheese on top and place the cover back on. Cook until that cheese on top is melted.
  5. Serve with tortilla chips, crackers, or veggies!

Still have my royal blue 4 quart Nesco from QVC, but the book that came with mine doesn't have a recipe like the one you mentioned.

Google is your friend. Type in the name of your appliance and add the words "recipe booklet"
