Homemade Pie Day is held every year on August 1. It’s a day to celebrate pie, a dish that has existed since the era of the ancient Egyptians. Pies have featured in one form or another in several cultures around the world, from the ancient Greeks to the Romans to the British and eventually, the Americans. Today, pie has become a symbol of American life. It can be eaten as a meal, as a dessert, or as a snack.

 

Any good homemade pie recipies out there ?  Please Share and enjoy your pie ! I don't make any pies so a good recipe would be great !

Italians eat a lot of pie. Here in the U.S. it’s called pizza.

Food Network's Heirloom Tomato Pie ( you dont have to use heirloom tomatoes but it is a looker if youu do.)

The cornmeal cheese crust is divine! I will make 3 ir 6 at a time because folks want them when i do. Its actually only 1 of 2 pies ive ever made ( but i dont have kids etc.)

@ECBG well, when i make it, i end up eating breakfast , lunch and dinner because i love it so much. It can be a main or a side to a fancy dinner. I never really thought about that.

 

Depending on the store i go to, ive used regular red  and yellow tomatoes with halved cherry heirlooms in the different colors filllng in gaps. You can use your summer tomatoes up and just use those for a more casual pie. Its still YUM.

 

Ive also subbed asiago for the manchego depending on the prices.

 

Ive read reviews where some people use refrigerated pie dough. I BEG you dont do that because to me the crust is the best part of this one.IMO.

 

I saw it on the cover of their magazine like 15 years ago and had to make it, never having made a pie in my life lol

Oh man, I have not made tomato pie in a long while. The Southern tomato pie by Vivian Howard has quite a few steps, but man is it tasty.

My mother's recipe for lemon meringue pie, my husband's favorite dessert:

 

Filling:

1 1/4 cups sugar

2 tbsp flour

3 1/2 tbsp cornstarch

1/4 tsp salt

1 1/2 cups water

1/4 cup lemon juice

2 tbsp butter

4 egg yolks

1 tsp vanilla

1 1/2 tsp lemon extract

 

Whisk sugar, flour, cornstarch, and salt in saucepan.  Stir in water, lemon juice, and lemon extract over heat until coming to a boil.  Stir in butter. 

Beat egg yolks in bowl and slowly whisk in 1/2 cup hot mixture.  Whisk egg yolk mixture back into saucepan.  Cook on low while stirring until thick, about 15 minutes.

Pour into baked pie shell.

 

Meringue:

4 egg whites

6 tbsp sugar

1/2 tsp cream of tartar

1/2 tsp vanilla

 

Whip egg whites with electric mixer until foamy, about 2 mins.  Whip in cream of tartar and vanilla.  Slowly add sugar and whip to form stiff peaks, about 15 minutes.  Spread on top of filling to cover to edges of crust.

Bake in 350 degree oven until meringue is golden brown, about 10 minutes.

Cool for 1 hour, then refrigerate before serving.

@deepwaterdotter  mmmmmm lemon merigue is one of my favorite pies. Sounds scrummy as Mary Berry would say!
