@wagirl  Sounds wonderful. I have a son who is a chef and let me tell you it's always a treat to visit. Too bad he's 1000 miles away. I've heard of cowboy caviar before but have never had it. Bet it was yummy.

Some guys won't even open a can of soup. Your son sounds like an experienced cook.

@Kachina624 --those were exactly the words he used!!! Woman Wink He decide to go the vegetarian way of life when he moved out at 18 so he had to figure it out. Now he eats seafood as his protein of choice. Much easier to cook especially when I cook for him.

@AuntG ----Yes I think he is ---what blows me away is that his fiancee and her sons are meat eaters so he cooks for them and never tastes what he cooks,  being meat---and they all rave about what he cooks. Normally he will cook for them and then cook what he eats which is plant based protein or "meat" and seafood.

What my son called cowboy cavier was not what the recipes given here was--he cooked his--had beans and onions and not sure what else but it was pretty good--maybe it was joused up refried beans-----will have to ask--I put a bunch on my taco with the rest of it and it was darn good.

Have to say that the recipes here sound amazing!!!

@wagirl   The 'cowboy caviar' I have had is a lot of items (don't have the recipe) that is diced up pretty small and used as a dip with tortilla chips....it's very good, but labor intensive to chop everything.
