That was a delight for me to actually watch. I never taught him to cook---not sure if he wasn't interested or what---we baked together when he was little--anyway, he is 44 and  vegan-- just bought a house with his girl and they are engage now, , she has 4 kids, all older. Got invited over for dinner last night and he hand made flour tortillas for our  dinner. Also made cowboy cavier as a side and had all the extras to make our own tacos!! What a treat for me!! Woman Very Happy The tortillas were very good--thick and chewy and nicely charred on a hot griddle!! He is the chief cook and actually cooks meat dishes  for the others in the house hold and all without tasting it--everyone  can't sing his praises enough!!

@wagirl     That's wonderful!  You don't find many men who like to cook, besides maybe grilling. 


It sounds like you had a really fun time too.  I have to ask something though, what is cowboy caviar?  Most likely something I might enjoy.😃

@wagirl  What a lovely treat for you.  Your son sounds like a very nice man who enjoys cooking and is happily settling into a soon to be married and family life!

My son is a great cook!  What he can do with a Prime Rib is out of this world!

@cheriere  My recipe for Cowboy Caviar:

 

1 15-0z can navy beans

1 15-oz can black beans

1 11-oz can Green Giant Steamcrisp yellow and white whole kernel corn

1/2 cup diced red bell pepper

2 Roma tomatoes, diced

2 tbsp chopped red onion

1/3 cup Italian salad dressing

1/2 tbsp lemon or lime juice

1 avocado, diced

 

Drain and rinse beans and corn.  I spin dry in a salad spinner.

Stir in pepper, tomatoes, and onion.

Fold in dressing and juice to coat.

Fold in avocados just before serving.

I use black eye peas instead of navy beans for this salad. So enjoyable. Also, a small minced jalepeno is good if you like those.

My recipe for Cowboy Caviar

 

Cowboy Caviar with Blackeye Peas

Ingredients:

DRESSING

1/3 cup red wine vinegar
4 tablespoons olive oil
4 cloves garlic, minced
2 teaspoons cumin
2 teaspoons salt
1 teaspoon dried oregano
Tabasco to taste

SALSA

4 cups cooked Blackeye Peas

1 can black beans drained and rinsed
2 Roma tomatoes, diced
1 yellow bell pepper, seeded and diced
1/2 large red onion, diced
1 jalapeño pepper, seeded and finely diced
1 bunch cilantro, chopped

Directions:

Combine dressing ingredients in a small bowl and whisk together. Add hot sauce to taste.
Combine salsa ingredients in a large bowl and toss thoroughly.

Pour dressing over salsa and mix gently. Cover and refrigerate for at least 1 hour or overnight.
Serve as a side dish or with chips as an appetizer.
