Here you go @Just Bling

 

3 Large Eggs

1 Cup of Dark Karo Syrup

1/2 Cup of Sugar

1 Tsp of Vanilla

1 Stick (yes the whole stick) of Melted Butter

1 and 1/2 Cups of Pecans - (Either whole or pieces)

 

Combine first 5 ingredients in a bowl, then fold in the Pecans 

 

Pour this mixture into a 9-inch Pie Crust (Homemade or Pillsbury)

 

Bake @ 350 degrees for approx. 50-55 minutes

 

Allow to cool on a wire rack for a few minutes, then serve with Ice Cream (if you like) - I'll add a dollop of either Chocolate, Coffee, or Vanilla Bean sometimes, but mostly I just eat it plain. Woman Wink

Yummy. I use walnuts sometimes with a shortbread crust. I could just eat the filling all by itself.

I'm sorry, I forgot to indicate that I use "Salted" Butter - Some recipes call for a pinch of salt, but I've always used salted butter instead.

 

And yes, a splash of Bourbon or Rum makes it even better!  Smiley Wink

This is my recipe for shortbread crust:

 

10 tbsp room temperature butter

2/3 cup brown sugar

1 cup almond flour

1 1/2 cups flour

1/2 tsp kosher salt

 

Mix everything in a bowl with electric mixer.  Press into greased metal pie tin.  Bake at 350 degrees until light gold around the edge, 13-15 minutes.
