Would you mind sharing your Shortbread crust recipe?

I think that would be divine w/ Pecan Pie!

I got this from the internet a long time ago. It's nice for either bake or no bake pies. I've also used shortbread cookies to make crust, same as you would w/ graham cracker crust. Both are delish.

Shortbread crust for 8 or 9 inch round pie dish or tart pan

  1. 1 stick unsalted butter at room temperature
  2. 1/3 cup granulated sugar
  3. 1 tsp vanilla extract
  4. pinch of salt
  5. 1 cup + 2 TBSP all-purpose flour

  • Mix together all of the ingredients. The mixture will be very crumbly. (I use my hand mixer or food processor on pulse).
  • Using damp hands, transfer the dough crumbs into the prepared dish and pat down evenly. Use a fork to dock (poke) the dough all over.
  • Bake on the middle rack at 350 F
  • If the filling will need to be baked, par-bake the crust for 20-25 minutes until the edges are lightly browned.
  • If the filling will not need to be baked, bake for 30-35 minutes until the crust is completely cooked and let cool completely.
