Mexican Lasagna
1 bag of Nacho Cheese Doritos
1 pound ground beef
1 cup sour cream
1 cup cottage cheese
1 egg
1 pound shredded cheddar or Mexican cheese
1 package taco seasoning
2 -8 oz cans tomato sauce
Brown ground beef and drain. Add sauce and taco mix, simmer on low for 5 minutes. Set aside.
Mix together in a bowl sour cream, cottage cheese, egg, and salt and pepper
In a baking dish crush a thin layer of Doritos, then put in a layer of the cheese mixture, then a layer of sauce. Continue layering ending with cheese.
Bake uncovered at 350 for about 20 to 30 minutes or until the cheese is all melted.

And the bonus is most of the ingredients are on sale because of this weekend's Super Bowl.

@LilBitMissty. I'd have to sandwich a layer of green chile in there somewhere. It does so much for a dish like this. Doesn't have to be spicy; comes in mild flavor.

I never heard of that before. I will make it one day, put it in the freezer and eat it in increments when DH is not watching. Ha ha.

I've eaten a Mexican Lasagna that used Flour Tortillas (in place of the the Lasagna Noodles). I think I even had a receipe for it but don't remember running across it in a long while.

I make this one which uses corn tortillas which I also call Mexican Lasagna (but I think it was originally called South of the Border bake):

Here's another we enjoy-- don't find it hot at all!
Usuaaly split it into two 8x8 glass baking dishes and freeze one.
